These brown sugar overnight oats are simple yet so delicious because the brown sugar adds such a yummy flavor! You can prep them in just a few minutes and they’re a filling breakfast for busy mornings.
Thanks to a combination of oats, chia seeds and greek yogurt, these overnight oats are going to help keep you full all morning long. They’re one of my go-to breakfasts I prep when I know I have a busy week ahead.
After making my cookie dough overnight oats, I wanted to make a brown sugar version! Just like all the easy breakfast recipes I develop, these overnight oats are simple to make but taste so good. My other favorite overnight oat recipes are snickers, almond butter, pumpkin spice, and banana chia!

- Oats: I recommend using old-fashioned oats or rolled oats, these oats will have a better texture in the overnight oats compared to steel-cut oats. You could also use instant oats or quick oats if you have those on hand!
- Chia Seeds: the chia seeds are going to thicken up the oats overnight, plus they give you a big boost of fiber!
- Light Brown Sugar: can’t have brown sugar overnight oats without brown sugar! The brown sugar helps sweeten these overnight oats. If you only have dark brown sugar on hand that works as well. I typically add pure maple syrup to my oats but the brown sugar has such a distinct taste that I love!
- Milk: I’ve tested this recipe with all types of milk, so you can use regular milk or plant milk. Any type of milk will work.
- Yogurt: I typically use fat-free plain greek yogurt to get an extra boost and creaminess in my oats, but you can use any yogurt you enjoy!
Additions and Substitutions
- I don’t recommend swapping out the brown sugar for another sweetener! If you needed to, the closest flavor profile would probably be maple syrup or coconut sugar.
- Feel free to add a ½ teaspoon of ground cinnamon or ½ teaspoon of vanilla extract for extra flavor.
- Add chocolate chips, diced apples, berries, bananas, almond butter or peanut butter, cinnamon or any other toppings you love to this easy overnight oats recipe.
- If you want these overnight oats to be dairy-free, just be sure to use dairy-free milk and dairy-free yogurt.
- You can easily make these overnight oats gluten-free by using gluten-free certified oats.
step by step instructions
Step 1: In a jar or bowl, mix together the oats, brown sugar, chia seeds.
Step 2: Mix in the greek yogurt and milk until well combined.
Step 3: Cover with a lid and place in the fridge for at least 5 hours.
Step 4: The next morning, take it out of the fridge and stir. Sprinkle over extra brown sugar and top with fresh fruit. Enjoy!
Tips & Notes
- If the next morning you find the oats are kind of dry, add a splash of milk and mix together.
- Looking for an extra protein boost? Add a scoop of your favorite protein powder!
- Times the ingredient amount by 3 or 4 and make a big batch of these in a large container and scoop yourself a serving in the mornings.
- I love making this delicious recipe in these overnight oat jars, or just a regular mason jar.
Serving Suggestions
Serve these overnight oats with veggie egg white muffins or cheesy scrambled eggs!

Brown Sugar Overnight Oats

- ½ cup old fashioned oats
- ½ tablespoon chia seeds
- 1-2 tablespoon brown sugar plus extra for topping
- ½ cup milk
- ¼ cup greek yogurt
Instructions
- In a jar or bowl, mix together the oats, chia seeds, and brown sugar.½ cup old fashioned oats, ½ tablespoon chia seeds, 1-2 tablespoon brown sugar
- Stir in your milk of choice and greek yogurt until well combined.½ cup milk, ¼ cup greek yogurt
- Cover with a lid and place in the fridge for at least 5 hours, preferably overnight for the best texture.
- In the morning, give it a good mix before eating. Top with extra brown sugar & fresh berries.
Notes
- Store these overnight oats in the fridge for 4-5 days, just give it a good stir before enjoying. Overnight oats can be eaten cold straight from the fridge or warmed up in the microwave.
- If your oats seem dry in the morning, add a splash of milk and stir.
