Packed with warm, caramelized flavor from crushed Biscoff cookies and creamy cookie butter, this easy baked oatmeal feels like dessert but is wholesome enough to start your day. It's perfect for meal prep, made with simple pantry ingredients, and guaranteed to make your kitchen smell amazing.

Whenever I'm feeling like I need a little warmth in my life (and in my meals), I tend to turn to Biscoff. It's spiced, caramelized flavors transports me directly to a crisp fall day where the leaves are changing colors and the sun is shining (my northeast people, you know the vibe). Biscoff is one of those almost nostalgic flavors, even if you didn't eat it growing up! After I made my Nutella Baked Oats, I knew these would be just as good.
These biscoff baked oats are everything you could ask for in a breakfast and more- the cozy, spiced sweetness of a cookie but made with wholesome ingredients like oats, milk, and eggs. The texture is soft and cake-like, making it feel like you're eating cake for breakfast, but it's filling and satisfying enough to help you power through your busy mornings. Plus, it's easy to prep ahead, making those mornings you're rushing to work feel a little more special, with minimal effort.
Whether you enjoy it warm out of the oven or reheated throughout the week, this recipe is pure comfort in every bite. As a breakfast recipe developer, I am always trying to find easy but delicious ways to make breakfast more enjoyable- some of my favorite recipes are this Peanut Butter Baked Oatmeal, or these Single Serve Baked Oats.

ingredients you need
- Rolled Oats: make sure to use rolled/old-fashioned oats. They give you that chewy texture we're looking for.
- Biscoff Spread: the star of the show! They make off-brand cookie butter spreads, so you can use whatever you can get your hands on.
- Milk: feel free to use whatever milk you enjoy best.
- Maple Syrup: to add a little bit of extra sweetness, but if you find the biscoff to be sweet enough, feel free to omit this.
- Baking Powder
- Salt
- Egg
- Vanilla Extract
What flavor is biscoff?
Biscoff is actually a brand of caramelized, spiced cookies that originated in Europe. The cookies are crisp, sweet, and flavored with speculoos spices- like cinnamon, nutmeg, cloves, ginger, and brown sugar- which give them a deep, warm flavor. If you've ever taken a flight on Delta Airlines, you've probably been given biscoff cookies before!
Biscoff spread is a creamy (or crunchy) spread made out of crushed biscoff cookies. It has the consistency of peanut butter, but tastes just like the caramelized spiced cookies. It's delicious in desserts, but even better taken by the spoonful out of jar (my fav way to consume it).
How to make



This recipe is super easy like any of my baked oatmeal recipes! All you need is a bowl and a whisk to make this in no time.
- Start by mixing the dry ingredients together in a bowl.
- Add in the wet ingredients (including the biscoff spread) and whisk until smooth. The biscoff spread will seem tough to mix in at first, but keep going and it'll smooth out.
- Pour the oat mixture into a baking dish, top with extra biscoff cookie crumbles, and bake for 35-40 minutes.
Once your oatmeal has baked and cooled for a little, slice & enjoy with your favorite toppings as a hearty breakfast, or a snack!
Favorite Topping Ideas
- Drizzle of biscoff spread - always a good idea to add more biscoff!
- Extra biscoff cookie crumbles- for more of a crunch.
- Chocolate chips - dark or white chocolate chips (or melted to make a drizzle) would be delicious with this recipe.
- Fresh berries - strawberries, blueberries, raspberries would be delicious on top of this oatmeal bake.
- Caramel sauce- is you need some more indulgence.
- Bananas- fresh or caramelized banana slices would compliment the warm, spiced cookie flavor in biscoff so well!
- Whipped cream- always a favorite of mine when topping baked oats.

Storage and Reheating
Once cooled completely, keep the sliced baked oatmeal in an airtight container in the fridge for up to 5-6 days. I like to reheat mine in the microwave, but you can also reheat it in the oven.
To freeze, place in an airtight container and freeze for up to 2 months. Let thaw in the fridge overnight, or at room temperature for a couple of hours before reheating and enjoying.

Easy Spiced Biscoff Baked Oats
Ingredients
- 2¼ cups rolled oats
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1¼ cup milk
- 2 tablespoon maple syrup
- 1 egg
- ½ cup biscoff spread plus extra for drizzling
- 2 teaspoon vanilla extract
- Biscoff cookie pieces optional for topping
Instructions
- Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking dish with non-stick spray, or line with parchment paper. Set aside.
- In a large bowl, whisk together the oats, baking powder, and salt.2¼ cups rolled oats, 1 teaspoon baking powder, ¼ teaspoon salt
- Pour in the milk, maple syrup, egg, biscoff spread, and vanilla. Stir until everything is combined.1¼ cup milk, 2 tablespoon maple syrup, 1 egg, ½ cup biscoff spread, 2 teaspoon vanilla extract
- Pour the oat mixture into the baking pan, topping with crushed biscoff cookie pieces. Bake for 35-45 minutes, or until the center is set. Allow the oats to cool in the pan for a few minutes before topping with an extra drizzle of biscoff spread and serving.Biscoff cookie pieces
