Basically, it's all the best parts of a cinnamon roll in a cozy baked oats form. Easy to prep, made with simple ingredients, and perfect for busy mornings or weekend brunch-this is one baked oatmeal recipe you'll want to make on repeat.

This easy cinnamon roll baked oatmeal recipe is like your favorite piece of gooey, warm cinnamon rolls, but in baked oats form! These soft and fluffy oats are packed with rich cinnamon flavor, thanks to a crunchy cinnamon sugar topping. Obviously they are topped with a drizzle of a decadent cream cheese icing, just like real cinnamon rolls (cause thats the best part, don't lie). These baked oats don't need any fancy equipment, all you need are a couple of mixing bowls. Plus, most of the work is done in the oven!
These cinnamon roll baked oats give you all the flavor of cinnamon rolls without the effort and time it takes to make real ones! Plus the help you start your day off with filling oats that give you all the energy you need- That's a win for me. Just like my Nutella baked oats, this cinnamon roll baked oatmeal is great to meal prep and reheat throughout the week, but it's also perfect to whip up and serve to a crowd!

ingredients you'll need
- Rolled Oats: using rolled oats or old-fashioned oats is key to getting that chewy texture. I don't recommend using quick cook oats because they tend to get too mushy, and steel-cut oats are going to be too tough.
- Cinnamon: ground cinnamon is key to this recipe! If you haven't tried ceylon cinnamon, it's so sweet and delicious- I love using it in this recipe!
- Milk: you can use regular milk or vegan milk.
- Maple Syrup: feel free to swap this out for honey.
- Salt
- Baking Powder
- Eggs
- Melted Coconut Oil: you can easily swap this out for melted butter.
- Vanilla Extract: don't skip this! It really helps with flavor of these oats.
- Cream Cheese: a must for making our cream cheese icing! I prefer to use the block cream cheese.
- Powdered Sugar: this will thicken up and sweeten our icing.

This baked oats recipe, like all my others, is super simple to make! I promise I wouldn't lead you astray by giving you some complicated oat recipe.
- start by mixing together all the ingredients in a large bowl until combined.
- pour this into your prepped baking dish, and top with a cinnamon sugar mixture that will crisp up in the oven a bit.
- Bake until cooked through! Let it cool a bit and top with the cream cheese icing.
and BAM- that's it! Now you have a simple yet filling breakfast to enjoy throughout your work week.

Storage and Reheating
Once cooled, keep the oatmeal in an airtight container in the fridge for 5-6 days. I like to reheat my baked oats in the microwave until warm, but you can also reheat it in the oven.
To freeze, place in an airtight container and freeze for up to 2 months. Let thaw in the fridge overnight or at room temperature for a couple of hours before reheating. If you plan on freezing from the start, I would wait to add the cream cheese icing on top, and add it later when ready to serve.

Cozy Cinnamon Roll Overnight Oats with Cream Cheese Icing
Ingredients
- 2¼ cups rolled oats
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- 1¼ cup milk
- ⅓ cup maple syrup
- 2 large eggs
- 3 tablespoon melted coconut oil or butter
- 2 teaspoon vanilla extract
Cinnamon sugar topping:
- 2 tablespoon granulated sugar
- 1 teaspoon cinnamon
Cream Cheese Icing
- 4 tablespoon cream cheese at room temperature
- 1½ tablespoon powdered sugar
- 2-4 teaspoon milk
Instructions
- Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking pan with non-stick spray, or line with parchment paper. Set aside.
- In a large bowl, whisk together the oats, baking powder, salt, and cinnamon.2¼ cups rolled oats, 1 teaspoon baking powder, ¼ teaspoon salt, 1 teaspoon cinnamon
- Pour in the milk, maple syrup, eggs, oil, and vanilla. Stir until everything is combined.1¼ cup milk, ⅓ cup maple syrup, 2 large eggs, 3 tablespoon melted coconut oil, 2 teaspoon vanilla extract
- Pour the oat mixture into the baking pan. In a small dish, mix together the cinnamon and sugar and sprinkle evenly on top of oats.2 tablespoon granulated sugar, 1 teaspoon cinnamon
- Bake for 35-45 minutes, or until the center is set. Allow the oats to cool in the pan for a few minutes before topping with cream cheese icing.
- Make icing: in a small bowl, mix room temperature cream cheese with powdered sugar and milk until smooth. Add more milk until you reach your desired consistency.4 tablespoon cream cheese, 1½ tablespoon powdered sugar, 2-4 teaspoon milk
Notes
- store baked oats in an airtight container for 5-6 days
- reheat in the microwave or oven until warmed throughout
- if freezing, let it cool completely and freeze without adding the cream cheese icing. Once defrosted, add icing after reheating.
