Cozy Cinnamon Roll Overnight Oats with Cream Cheese Icing

Ingredients

  • cups rolled oats
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • cup milk
  • cup maple syrup
  • 2 large eggs
  • 3 tbsp melted coconut oil or butter
  • 2 tsp vanilla extract

Cinnamon sugar topping:

  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Cream Cheese Icing

  • 4 tbsp cream cheese at room temperature
  • tbsp powdered sugar
  • 2-4 tsp milk

Instructions

  • Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking pan with non-stick spray, or line with parchment paper. Set aside.
  • In a large bowl, whisk together the oats, baking powder, salt, and cinnamon.

  • Pour in the milk, maple syrup, eggs, oil, and vanilla. Stir until everything is combined.

  • Pour the oat mixture into the baking pan. In a small dish, mix together the cinnamon and sugar and sprinkle evenly on top of oats.

  • Bake for 35-45 minutes, or until the center is set. Allow the oats to cool in the pan for a few minutes before topping with cream cheese icing.
  • Make icing: in a small bowl, mix room temperature cream cheese with powdered sugar and milk until smooth. Add more milk until you reach your desired consistency.
    4 tbsp cream cheese, 1½ tbsp powdered sugar, 2-4 tsp milk

Notes

  • store baked oats in an airtight container for 5-6 days
  • reheat in the microwave or oven until warmed throughout
  • if freezing, let it cool completely and freeze without adding the cream cheese icing. Once defrosted, add icing after reheating.
