This oatmeal is hearty and wholesome, and feels like a little treat made just for you. Wether you're looking for a quick meal that won't leave you with leftovers, or you have a slow morning and want to make yourself something delicious, this baked oatmeal is perfect anytime!
Being a breakfast recipe developer, I am always trying to come up with quick, single-serve recipes for people to enjoy. This recipe comes together in minutes and bakes into a perfectly golden oat cup you can enjoy straight from the ramekin, or take on the go.
My favorite part about this oatmeal is that it is endlessly customizable! You can add chocolate (obviously my fav- like my chocolate chip baked oatmeal), fruits, nuts- whatever you're in the mood for. ingredients you need

- oats- old-fashioned (also known as rolled oats) are the best to use in baked oat recipes because they give you the best texture after being baked. You can use quick oats in a pinch but the texture will be off!
- baking powder & salt
- cinnamon- gives this recipe a little spice & warmth! Feel free to add others like nutmeg, cloves, ginger, or pumpkin pie spice.
- milk- any milk works in this recipe.
- maple syrup- using this as our sweetener. You could also use honey.
- coconut oil- can easily swap this for melted butter.
- egg
- vanilla extract
- chocolate chips- I used mini chocolate chips in mine, but you can use regular or another add in you love.
Fun Flavor Ideas
- Peanut Butter & Jelly
- Stir in ½-1 tablespoon peanut butter and swirl in 1 teaspoon of your favorite jam before baking.
- Top with crushed peanuts or a drizzle of extra PB after baking.
- Pumpkin Spice
- Stir in 1 tablespoon pumpkin purée and a dash of pumpkin pie spice.
- Top with pecans or a spoonful of whipped cream if you're feeling fancy.
- Blueberry Lemon
- Fold in a small handful of fresh or frozen blueberries and add ½ teaspoon of fresh lemon zest.
- Carrot Cake
- Mix in 2 tablespoon finely grated fresh carrot, a pinch of nutmeg, and a handful of chopped walnuts or raisins (optional).
- Add a cream cheese/greek yogurt mixture to the top after baking, making a sort of "frosting" for the top"
How to make



Making this single serve baked oatmeal could not be easier. I don't mess around in the mornings (I got things to do), so if I can make this super fast, you know it's an easy one!
- start by mixing all the dry ingredients together in a small bowl.
- add in the wet ingredients and whisk until smooth. Mix in some mini chocolate chips or another add-in you love.
- place into a small oven safe dish and bake!
That's it! So incredibly easy to make a delicious breakfast that is not only tasty, hearty, but also quick.
What kind of dish should I bake this in?
I made these in my cute little staub ramekins (that my husband got me for my birthday), but you can really make them in any small oven-safe dish! I'd definitely recommend using a ceramic dish.
My ramekins were 8oz and it was filled basically to the top. If you have only smaller ramekins, I would suggest splitting into multiple dishes and baking (baking times may vary so keep an eye on them).
If your ramekin is super full (like to the tippy top), I recommend placing a small baking tray underneath just in case it expands and overflows. We don't want oatmeal all over your oven now!

Storage and Reheating
If you aren't making and enjoying this immediately, I would recommend letting it cool completely before covering and storing in the fridge until you are ready to chow down on it.
To reheat, warm it up in the microwave for a little until warm throughout. You could also heat up in the oven, but be sure not to dry it out by leaving it in too long!

5-Minute Prep Single Serve Baked Oatmeal (No Banana)
Ingredients
- ½ cup rolled oats
- ½ teaspoon baking powder
- pinch of salt
- ¼ teaspoon cinnamon
- ¼ cup milk
- 1 tablespoon maple syrup
- 1 tablespoon melted coconut oil sub butter
- 1 egg
- ½ teaspoon vanilla extract
- 1-2 tablespoon mini chocolate chips
Instructions
- Preheat your oven to 350° Fahrenheit and spray a ramekin with non-stick spray. Set aside.
- In a bowl, whisk together the oats, baking powder, salt, and cinnamon.½ cup rolled oats, ½ teaspoon baking powder, pinch of salt, ¼ teaspoon cinnamon
- Pour in the milk, maple syrup, oil, egg, and vanilla. Stir until everything is combined. Mix in chocolate chips¼ cup milk, 1 tablespoon maple syrup, 1 tablespoon melted coconut oil, 1 egg, ½ teaspoon vanilla extract, 1-2 tablespoon mini chocolate chips
- Pour the oat mixture into the ramekin, and top with extra chocolate chips if desired. Bake for 20-25 minutes, or until the center is set. Allow the oats to cool for a few minutes before serving.
Notes
- If your ramekin is super full to the top, place a small baking tray underneath. This will catch any overflow if that happens.
- Let the oats cool completely, then store covered in the fridge for 3-4 days.
- Reheat in the microwave or oven until warm throughout.

The metric conversions are off. I’m not sure about the rest of the ingredients but the oatmeal for sure is more than double what it should be. Hopefully that can be fixed because I enjoy using the metric conversions when possible!
