5-Minute Prep Single Serve Baked Oatmeal (No Banana)
This creamy and quick Single Serve Baked Oatmeal is perfect for those busy mornings when you want something warm and cozy, but don't want a bunch of leftover oatmeal to eat days later. Made with wholesome ingredients (and no bananas) and endless flavor possibilities, this recipe is the perfect one-person breakfast that is equal parts nourishing and indulgent. Preheat your oven to 350° Fahrenheit and spray a ramekin with non-stick spray. Set aside.
In a bowl, whisk together the oats, baking powder, salt, and cinnamon.
½ cup rolled oats, ½ teaspoon baking powder, pinch of salt, ¼ teaspoon cinnamon
Pour in the milk, maple syrup, oil, egg, and vanilla. Stir until everything is combined. Mix in chocolate chips
¼ cup milk, 1 tablespoon maple syrup, 1 tablespoon melted coconut oil, 1 egg, ½ teaspoon vanilla extract, 1-2 tablespoon mini chocolate chips
Pour the oat mixture into the ramekin, and top with extra chocolate chips if desired. Bake for 20-25 minutes, or until the center is set. Allow the oats to cool for a few minutes before serving.
Notes
If your ramekin is super full to the top, place a small baking tray underneath. This will catch any overflow if that happens.
Let the oats cool completely, then store covered in the fridge for 3-4 days.
Reheat in the microwave or oven until warm throughout.
