This one’s for all the chocolate lovers out there! These brownie baked oats are basically dessert for breakfast so it’s great if you’re like me and have a sweet tooth- I never shy away from chocolate for breakfast. When I was testing this recipe, my husband took a single bite out of it and I wish you all could have seen his face lol. Safe to say he LOVED them, and then continued to eat another whole piece on the spot.
I already have a chocolate baked oats recipe on my site, so to kick these up a notch and make them more brownie-like, I made them more chocolatey, more fudgy, and added drizzled chocolate flaky sea salt on top to reallyyyy get that brownie feel (flakey sea salt makes all the difference imo).
With just 10 simple ingredients and only 4 easy steps, this brownie baked oatmeal is going to be your new favorite breakfast recipe. Plus, it’s perfect for meal prep. Just like my blueberry baked oatmeal, these chocolatey brownie baked oats are seriously easy to whip up. I couldn't stop there though, and made a chocolate strawberry baked oatmeal version too!
If you want a warm version of my chocolate protein overnight oats, then this is the recipe for you. Think rich, brownie-like baked oatmeal loaded up with chocolate chips. Who can say no to that every morning? Not me!
why make baked oats?
- They’re perfect for meal prep since you can make a batch of them at the beginning of the week and reheat them every morning. I'm a sucker for ease and anything that can be quickly reheated and taken to go.
- You only need 10 simple ingredients that I bet you already have in your kitchen.
- The rolled oats are going to help keep you fuller for longer to help you power through those busy mornings.
- These brownie baked oats are seriously so easy to make, all you need is a bowl and a spoon/whisk! Most of the work is done in the oven so no need for a bunch of prep time or a million bowls which we loveee because who has time for a ton of dishes- not me!
What you'll need

- Rolled Oats: I recommend using old-fashioned oats or rolled oats. Quick cooking oats or instant oats will be too mushy and steel cut oats will be way too tough. If you’re gluten free just make sure to use certified gluten-free rolled oats and you’ll be good to go!
- Cocoa Powder: you can use natural cocoa powder or dutch-processed cocoa powder, but I recommend dutch-processed if you have it on hand as it gives a richer chocolate flavor (more on why below).
- Baking Powder
- Salt
- Milk: you can use whole milk, semi-skimmed milk, or non-dairy milk like almond milk, soy milk or oat milk.
- Pure Maple Syrup: maple syrup will help sweeten the oats! Feel free to swap it out for an equal amount of honey.
- Eggs
- Melted Coconut Oil: if you don’t have coconut oil on hand, swap it out for melted butter.
- Vanilla Extract
- Mini Chocolate Chips: don’t forget to add some extra chocolate chips on top of the oats just before baking! It’s basically the best part.
- Melted Chocolate & Flaky Salt: if you want to be extra like me, then I definitely recommend topping your brownie baked oats with melted chocolate and flaky sea salt.
Best cocoa powder to use
I recommend using Dutch processed cocoa powder! It’s richer in taste and darker in color, so it’s going to give you more of that brownie flavor. Not sure if what you have in your pantry is unsweetened cocoa powder or dutch processed? Check the ingredients list! If it mentions alkali or acidity regulators, then you’ve got dutch processed cocoa powder.
How to make


Step 1: Preheat your oven to 350°Fahrenheit and spray a 8x8 baking pan with non stick spray, or line with parchment paper.
Step 2: In a bowl, add the rolled oats, cocoa powder, salt, and baking powder. Pour the maple syrup, eggs, milk of choice, oil, and vanilla extract into the dry ingredients. Mix until smooth.
Step 3: Stir in the mini chocolate chips with a rubber spatula.

Step 4: Pour the brownie oatmeal mixture into your prepared baking dish and sprinkle over extra chocolate chips. Bake for 30-40 minutes, or until the center is set. Let the baked oats cool for a few minutes before serving.
Step 5: Drizzle over some melted chocolate chips and a sprinkle of sea salt!

Toppings
In my humble opinion, the drizzled chocolate and flakey sea salt are essential to getting that brownie feel with these oats. I used leftover semi-sweet chocolate chips and melted them in the microwave to drizzle on top of my oats. My favorite brand of flakey sea salt is Maldon, I have a tub that has lasted me forever!
These baked oats are good with a ton of different toppings though, so add anything you love! These would be great drizzled with maple syrup or honey, topped with whipped cream, or fresh berries.
What do I eat with baked oats?
Sometimes I need something a little extra on the side of my baked oatmeal cause I just be hungry like that! While baked oats on their own are so great, I like to add a little bit of extra protein like eggs, turkey bacon, or sausage. If you want to go the extra mile, these brownie baked oats would be perfect with my cottage cheese egg bake- I like to prep both at the beginning of the week to reheat throughout for easy mornings.

Storage and Reheating
Once the oats have cooled completely, keep them in an airtight container in the fridge for up to a week. You want them cool so you don’t get condensation in the container. I recommend heating up slices in the microwave but you can reheat them in the oven too!
To freeze, store in an airtight container or ziploc bag in the freezer for up to 3 months. Let thaw in the fridge overnight or at room temperature for a few hours before enjoying.

Quick & Fudgy Brownie Baked Oats
Ingredients
- 2 cups old-fashioned oats
- ½ cup dutch processed cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1¼ cup milk
- ⅓ cup maple syrup
- 2 large eggs
- 3 tablespoon melted coconut oil or butter
- 2 teaspoon pure vanilla extract
- ½ cup chocolate chips plus extra for topping
- Melted chocolate and flaky sea salt for topping, optional
Instructions
- Preheat the oven to 350° F. Spray an 8x8 baking pan with non stick spray, or line with parchment paper and set aside.
- In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt.2 cups old-fashioned oats, ½ cup dutch processed cocoa powder, 1 teaspoon baking powder, ¼ teaspoon salt
