This cottage cheese egg bake is the perfect high protein breakfast! Super easy to make, this egg bake is packed with all the good stuff like cheese, veggies, and bacon.
Just like my veggie egg white cups, this cottage cheese egg bake is packed with protein thanks to a combo of eggs and cottage cheese! I’ve added some turkey bacon because it's a great source of protein? You can always swap it out for chorizo or sausage!
This cottage cheese egg bake is also great for meal prepping. I rotate between making this and my Asparagus and Feta Frittata (also uses cottage cheese). Just prep it at the beginning of the week and you’ve got breakfast ready all week long! Plus, it’s a healthy breakfast that’s packed with nourishing ingredients which will keep you full longer.

Ingredients
- Cottage Cheese: you can use low-fat or fat-free cottage cheese.
- Turkey Bacon: I love adding turkey bacon to this cottage cheese egg bake, but feel free to swap it out for regular bacon, chorizo, sausage, or turkey sausage! Just be sure all meat is fully cooked through before adding it to the casserole.
- Cheese: I used a sharp cheddar but you can use colby jack, pepper jack, parmesan, feta, or gruyere!
- Veggies: I’ve added a combination of bell peppers and spinach, but you can easily swap that out for whatever veggies you’ve got in the fridge. Just make sure to sauté them before adding the veggies to the egg bake!

How to Make Cottage Cheese Egg Bake
This recipe is a few simple steps. Follow along below.
Preheat a skillet over medium heat and add olive oil. Once it’s hot, add the diced onions and peppers. Cook for 5-7 minutes or until soft. Add the spinach and cook for another minute. Remove the skillet from the heat and spread into your prepared baking dish. Set aside to cool.
In a large bowl, whisk together the cottage cheese, eggs, ¾ cup of cheese, garlic powder and salt.
Pour the egg mixture over the veggies and add the bacon, mixing it until combined. Top with the remaining ¼ cup of cheese.
Bake in the preheated oven for 30-40 minutes, or until the center is fully cooked through. Remove from the oven and let it cool for 15 minutes before topping with sliced green onions, slicing and serving.
Kelly's Top Tip
Make sure to grease your baking pan before pouring in the mixture, you don’t want it sticking to the bottom or sides of the pan!
Recipe Substitutions and Variations
- If you aren’t a huge fan of that cottage cheese texture, you can blend the cottage cheese in a blender or food processor to give it a smoother texture. I will say that even without doing that, you don’t get that cottage cheese texture coming through.
- Change up the add ins! This recipe is great to make when you have a bunch of vegetables in your fridge that need to be used. Just make sure that you saute them before adding to the egg bake mixture.
- Make it dairy free- use dairy free alternatives for the cottage cheese and cheese in this recipe.
- Make it vegetarian- leave the bacon out and go with just veggies!
Equipment Needed
You’ll need a skillet and a 9x13 baking pan! This is my favorite skillet and I’ve been using this baking pan for years. I also just bought this Staub casserole dish and love it!
If you’re shredding the cheese from a block, this is my go-to cheese grater.
How To Store
Once cooled down, keep the cottage cheese egg bake in an airtight container in the fridge for up to 5 days. You can reheat slices in the oven or microwave. To freeze, place in an airtight container in the fridge for up to 3 months. Let thaw in the fridge overnight before reheating and enjoying.

Ingredients
- 1 tablespoon olive oil
- 1 cup diced yellow onion
- 1 cup diced red bell pepper
- 4 cups baby spinach
- 12 large eggs
- 16 oz low fat small curd cottage cheese
- 6 slices turkey bacon cooked and chopped
- 1 cup shredded cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat oven to 350℉ and spray a 9x13 pan with cooking spray. Set aside.

This breakfast bake was so easy to make and is so good! As soon as I saw the recipe pop up in my inbox, I knew that I had to make it.
