- Shallot- I love the flavor of shallots because they are a bit more mild than an onion. If you love onion, feel free to swap!
- Asparagus- I prefer asparagus that is super thin vs. thick. If you can only find thick asparagus, that is totally fine! It might need an extra minute or two to soften on the stovetop before adding the eggs
- Feta- I love plain feta, and I usually buy pre-crumbled for ease. You can also buy the full block and crumble yourself.
- Egg whites- I used eggs and egg white in this recipe for extra protein.
- Cottage cheese- Also for extra protein and creaminess! I promise you can't taste it.

In a separate bowl whisk together the eggs, egg whites, cottage cheese, salt, and pepper.
Pour the eggs into the skillet with the asparagus, and let it cook over medium/medium-low heat for 4-5 minutes. Turn on your broiler while this is cooking.
Place into the oven under the broiler until the eggs are set in the middle and completely cooked through (about 4 minutes). Remove from the oven and allow to cool a little before slicing.

Make sure to use a pan that is also oven safe, since this goes into the oven under the broiler!
Recipe Substitutions and Variations
- Add more veg like chopped spinach, peas, chopped bell pepper, mushrooms, or cherry tomatoes to make this even more veggie friendly! Be sure to cook them beforehand like the asparagus and shallot.
- Pair this with a simple arugula salad dressed with olive oil and lemon juice! Or with a fruit salad on the side.
- Not big on feta cheese? Swap it out for a sharp cheddar, a gouda, swiss, fontina, or parmesan. Really any cheese you love works well with this recipe!
Equipment Needed
I used this staub cast iron skillet and when I tell you it's the best pan I've ever owned- I MEAN IT!
Obviously that is a bit pricey, but if you want a pan that is good on the stove and in the oven, this skillet is great.
How To Store
Frittatas should stay good in the fridge in an air-tight container for 4-5 days. I like to reheat mine either in the microwave or on the stove top.
I don't recommend freezing frittatas, although you can! It will change the texture of them when defrosted though.

Ingredients
- 2 tablespoon salted butter
- 1 large shallot sliced or diced
- ½ lb thin asparagus cut into 1" pieces
- 5 large eggs
- 2 egg whites
- ½ cup small curd cottage cheese
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¾ cup feta cheese
Instructions
- Add butter to a 10-inch oven safe skillet and melt over medium heat. Add the shallot and asparagus, cooking until fork tender (about 5 minutes).2 tablespoon salted butter, 1 large shallot, ½ lb thin asparagus
- In a separate bowl, whisk the eggs, egg whites, cottage cheese, salt, and pepper.5 large eggs, 2 egg whites, ½ cup small curd cottage cheese, ½ teaspoon salt, ¼ teaspoon pepper
- Pour the eggs into the skillet with the asparagus, sprinkle the feta cheese on top, and allow it to cook for about 4 minutes. Preheat your broiler on high.
- Move the frittata into the oven under the broiler for 4 minutes, or until the center is set and cooked through. Remove from the oven and allow to cool for a few minutes before slicing and serving.
