Asparagus Feta and Frittata

This Asparagus and Feta Frittata is the ultimate brunch recipe- loaded with tender asparagus, creamy feta, and fluffy eggs, it's easy to make and ready in just 30 minutes! Ingredients

  • 2 tablespoon salted butter
  • 1 large shallot sliced or diced
  • ½ lb thin asparagus cut into 1" pieces
  • 5 large eggs
  • 2 egg whites
  • ½ cup small curd cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¾ cup feta cheese

Instructions

  • Add butter to a 10-inch oven safe skillet and melt over medium heat. Add the shallot and asparagus, cooking until fork tender (about 5 minutes).

  • In a separate bowl, whisk the eggs, egg whites, cottage cheese, salt, and pepper.
    5 large eggs, 2 egg whites, ½ cup small curd cottage cheese, ½ teaspoon salt, ¼ teaspoon pepper
  • Pour the eggs into the skillet with the asparagus, sprinkle the feta cheese on top, and allow it to cook for about 4 minutes. Preheat your broiler on high.
  • Move the frittata into the oven under the broiler for 4 minutes, or until the center is set and cooked through. Remove from the oven and allow to cool for a few minutes before slicing and serving.

Notes

  • Store in the fridge for 4-5 days, reheat in the microwave or on the stovetop. 
  • Add in extra veggies, a (pre cooked) meat of your choice, or swap the cheese for another kind.
