Start it on the stovetop and finish it under the broiler for a perfectly golden, flavor-packed frittata that looks incredibly impressive on the table.
Add butter to a 10-inch oven safe skillet and melt over medium heat. Add the shallot and asparagus, cooking until fork tender (about 5 minutes).
2 tablespoon salted butter, 1 large shallot, ½ lb thin asparagus
In a separate bowl, whisk the eggs, egg whites, cottage cheese, salt, and pepper.
5 large eggs, 2 egg whites, ½ cup small curd cottage cheese, ½ teaspoon salt, ¼ teaspoon pepper
