This one-bowl Chocolate Strawberry Baked Oatmeal is so easy to make (only 10 minutes to prep), and even easier to eat! These sweet and chocolatey baked oats are packed with fresh strawberries, dark cocoa powder, chocolate chips, and hearty rolled oats. It's meal prep friendly too, since you can make this ahead of time and reheat throughout the week! It's my favorite cozy meal to serve for Valentine's Day breakfast.

Another flavor of baked oatmeal coming at ya, and to be honest, this one might be my favorite! I love the combination of chocolate and strawberry, so after I made my fresh strawberry baked oatmeal, I decided the only plausible next move was to add chocolate (and chocolate chips) to them!
With rich dutch-processed cocoa powder, hearty rolled oats, and juicy strawberries, this baked oatmeal recipe is perfect to make any time of year, but I love making this specifically on Valentine's Day for breakfast! It's giving chocolate covered strawberries! My fudgy brownie baked oatmeal is another recipe that is decadent and oh-so-chocolatey, perfect to make for someone you love.
These chocolate strawberry oats are made in one bowl, in less than an hour, and prep only takes about 10 minutes of your time! Talk about an easy make-ahead breakfast option that's easy to reheat throughout the week- just like these easy blueberry lemon baked oats.

- Did I mention it's a one-bowl breakfast recipes? Less dishes = more time doing things you actually enjoy (unless you enjoy doing the dishes, then you do you, boo).
what you need

- Rolled Oats: I always recommend using old-fashioned oats (or rolled oats, same thing) in baked oats recipes because they give you that sturdy, bar-like texture.
- Baking Powder
- Salt
- Cocoa powder
- Milk: you can use any milk you enjoy and have on hand.
- Maple Syrup: maple syrup is going to add sweetness to theses baked oats. This can be swapped for another sweetener you like.
- Eggs
- Melted Coconut Oil: swap this out for melted butter if needed.
- Vanilla Extract
- Strawberries
- Chocolate chips: I used mini semi-sweet chocolate chips, but any chocolate will work in this recipe.
Picking the best strawberries
Finding ripe and juicy strawberries sounds easy, but nothing is worse than buying a carton of $5+ strawberries, taking them home, and them having zero flavor and sweetness. The bane of my existence!!!
Strawberries are usually in season from April to June. Nowadays, you can find strawberries in any grocery store basically all year round. I always like to check under the strawberries little leafy green hat (green bits at the top) to see if it's red, or more white. If they're white, the strawberry was picked too early and probably isn't the best tasting. Typically a good batch of strawberries will give off a sweet aroma!
You can use frozen strawberries as well, just make sure they are chopped and don't defrost them! Add them straight in frozen (or they will release too much liquid into the oats and make them soggy).
how to make


Step 1: Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking dish with non-stick spray, or line with parchment paper. Set aside.
Step 2: In a large bowl, whisk together the rolled oats, cocoa powder, baking powder, and salt.
Step 3: Pour the milk, eggs, oil, maple syrup, and vanilla extract to the dry ingredients. Stir until combined. Fold in ¾ cup of strawberries and the chocolate chips.
Step 4: Pour the oat mixture into your prepared baking pan and top with the remaining strawberry pieces and extra chocolate chips. Bake for 35-45 minutes, or until the center is set and the top is golden brown. Let the oats cool for a 10-15 minutes before serving.


best cocoa powder to use
I recommend using a high quality dutch-processed cocoa powder when baking with cocoa powder! It's richer in taste and darker in color, so it's going to give you an all around better chocolate flavor. Check the ingredients list on your cocoa powder you currently have- If it mentions alkali or acidity regulators, then you've got dutch processed cocoa powder.
This + chocolate chips will give you that rich chocolate flavor. HOT TIP- add a pinch of espresso to these to really intensify the chocolate flavor!
can I swap quick oats in this recipe?
While yes, you absolutely can, using quick oats in this recipe is going to change the texture and probably the baking time as well. Old-fashioned oats give you that more bar-like, sturdy piece of oatmeal, whereas quick oats could turn out to be a bit more mushy. They also cook quicker than rolled oats, so be sure to keep an eye on them in the oven.

Storing, Reheating, Freezing
Once the oats have cooled completely, keep them in an airtight container in the fridge for 5-6 days. I recommend heating up slices in the microwave but you can reheat them in the oven too! If you find your reheated oats are a bit dry, add a splash of milk to them.
To freeze, store in an airtight container for up to 3 months. Let thaw in the fridge overnight or at room temperature for a few hours before enjoying.

- 2¼ cups old-fashioned oats
- ¼ cup dutch-processed cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1¼ cup milk at room temperature
- ⅓ cup maple syrup
- 2 eggs at room temperature
- 3 tablespoon melted coconut oil sub butter
- 2 teaspoon vanilla extract
- 1 cup chopped strawberries divided
- ½ cup mini chocolate chips plus extra for topping
Instructions
- Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking dish with non-stick spray, or line with parchment paper. Set aside.
- In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt.2¼ cups old-fashioned oats, ¼ cup dutch-processed cocoa powder, 1 teaspoon baking powder, ¼ teaspoon salt
