This Strawberry Baked Oatmeal is sweet & fruity, but also filling, which is exactly what I'm looking for for breakfast these days! With fresh, juicy strawberries, whole grain oats, coconut oil, and maple syrup as a sweetener, these baked oats are jam packed with ingredients that will keep you full & ready to go on busy mornings. Made in 1 bowl & in less than an hour, this recipe is perfect for anyone trying to cut down on time (and dishes) in the kitchen.

Strawberries are one of those fruits that I can never get enough of. They're delicious in just about everything, from toppings on pancakes, to salads, to desserts (now I want a chocolate covered strawberry, dang). Name one thing you don't like strawberries in, I'll wait!
After making my blueberry baked oats, I thought these would be delicious with every type of berry and I wanted to see how many different variations I could come up with! Adding strawberries to my favorite baked oatmeal base recipe was a seriously good move. Strawberries are already so naturally sweet, so they really elevate the flavor here. I love having a slice of these with some maple syrup or honey on top, and if I'm feeling crazy, a dollop of whipped cream! Are you a chocolate lover? If apples and bananas are more your speed over berries (I get it), I also love my apple baked oats & banana bread baked oats- both are delicious. ingredients

- Rolled Oats: I recommend using rolled oats or old-fashioned oats (they're the same thing), these are going to give you the best texture for baked oatmeal. You can use quick oats in a pinch, though it may affect the texture a bit. Steel cut oats are not recommended for baked oats (aka don't use them).
- Baking Powder
- Salt
- Milk: any milk works for this recipe. I typically use almond milk or regular milk, as that is what I keep in the fridge.
- Maple Syrup: maple syrup is going to add sweetness to the baked oats, which you could always leave out or swap for another sweetener like honey.
- Eggs
- Melted Coconut Oil: this can be swapped this out for melted butter.
- Vanilla Extract: love adding this for extra flavor! Make sure to use real vanilla extract, it makes all the difference.
- Strawberries
All about strawberries
I love using fresh strawberries for this recipe, but you can definitely use frozen strawberries if you find the strawberries near you aren't the best quality! Strawberries are typically in season from April to June, but depending on where you live they can start as early as April (looking at you Floridians).
Nowadays, you can find strawberries in any super market all year round, but that doesn't mean you'll get a good batch each time. I always like to check under the strawberries little leafy green hat (green bits at the top) to see if it's red, or more white. If they're white, the strawberry was picked too early and probably isn't the best tasting- and nothing is worse than spending $5+ on a carton of white, tasteless strawberries.
Fun fact: did you know strawberries are apart of the rose family?? I didn't!! How cool!
How to make



Step 1: Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking dish with non-stick spray, or line with parchment paper. Set aside.
Step 2: In a large bowl, whisk together the rolled oats, baking powder, and salt.
Step 3: Pour the milk, eggs, oil, maple syrup, and vanilla extract to the dry ingredients. Stir until combined. Fold in ¾ cup of strawberries.
Step 4: Pour the oat mixture into your prepared baking pan and top with the remaining strawberry pieces. Bake for 35-45 minutes, or until the center is set and the top is golden brown. Let the oats cool for 10-15 minutes before serving.

What are we topping baked oats with?
The thing I love about baked oatmeal, and really just oatmeal in general, is that it's basically a vessel to get all your favorite toppings into your belly! For strawberry baked oats, I love adding a little maple syrup or honey to add just a touch more sweetness. Adding a nut butter like peanut butter would also be so good on these!
Before baking, you could also add mini chocolate chips to these to make give them a little chocolate flavor! I do have a chocolate strawberry baked oatmeal recipe coming soon.
Storing, reheating, freezing
Let the oatmeal cool completely, then slice and store in an airtight container in the fridge for 5-6 days. To reheat, I like warming up slices in the microwave or in the oven.
To freeze, place in a freezer bag/airtight container in the freezer for up to 2 months. Let thaw at room temperature for a few hours or in the fridge overnight.

Strawberry Baked Oats
Ingredients
- 2¼ cups old-fashioned oats
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1¼ cup milk at room temperature
- ⅓ cup maple syrup
- 2 eggs at room temperature
- 3 tablespoon melted coconut oil substitute butter
- 2 teaspoon vanilla extract
- 1 cup chopped strawberries divided
Instructions
- Preheat your oven to 350°Fahrenheit and spray an 8x8 square baking dish with non-stick spray, or line with parchment paper. Set aside.

Notes
- Top these with your favorite toppings- maple syrup, honey, whipped cream, extra berries, nut butters.
- Reheat in the microwave or oven until warm.
- To store: after they have cooled, place them in an airtight container and store in the fridge for 5-6 days.
- To freeze: Place the baked oats in a freezer-safe container and store for up to 2 months. To defrost, allow them to come to room temperature.
