- Oats- I used rolled/old fashioned oats for this recipe, but quick oats work too! It will give you a different texture and you might need to add a bit extra liquid if you use quick oats.
- Bananas- Bananas add the flavor to these oats. I like to use them when they are super ripe so they are sweeter! See my top tip below on how to ripen bananas quickly.
- Maple syrup- This is our only other added sugar in this recipe. I love the flavor combo of banana and maple!
- Milk- I tested with both whole and almond milk, and both worked great! Use whatever milk you enjoy.

How to Make Banana Bread Baked Oatmeal
This recipe is quick and easy to make. Follow along below-
Whisk oats, baking powder, salt, and cinnamon together in a bowl. Set aside.
In a large bowl, whisk together the mashed bananas, milk, maple syrup, eggs, and vanilla.
Pour oat mixture into the wet ingredients and mix until just combined.
Pour this into your prepared baking dish and bake for 40-45 minutes, until cooked through and golden brown. Allow to cool for a little before serving.
Add any mix ins like nuts or chocolate chips after mixing in the oats, and sprinkle a few extra on top before baking! I added banana coins to mine.
Kelly's Top Tip
Ripe bananas will give you the best flavor- they get sweeter as they ripen! If your bananas aren't quite ready yet, you can ripen them in the oven by baking the unpeeled bananas for 20-30 minutes (in a 300F oven). They should come out dark brown and very squishy. Let them cool completely before using for this recipe!
Recipe Substitutions and Variations
- My favorite add-ins: extra slices of banana on top, dark or semi-sweet chocolate chips, chopped nuts, unsweetened coconut flakes.
- Serve with fresh sliced banana, fresh berries, cinnamon, a drizzle of nut butter, toasted nuts, honey, maple syrup, or whipped cream.
- Make this dairy free by using dairy free milk, and swapping the eggs for chia seed eggs or ¼ cup of applesauce per egg to make it vegan.
- Swap the maple syrup for your fav sweetener: honey, molasses, coconut sugar, or regular granulated sugar.

How To Store
This baked oatmeal will stay good at room temperature in an airtight container for 2-3 days, or up to a week in the fridge. You can reheat the oats in the microwave, oven, toaster oven, or even on the stovetop.
You can also freeze these for up to 3 months. To defrost, allow the oats to sit in the fridge overnight or at room temperature for a few hours. You can also defrost in the microwave.

Banana Bread Baked Oatmeal
Ingredients
- 2½ cups rolled oats
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1½ cups mashed bananas about 3-4 bananas
- 1½ cup milk
- ⅓ cup maple syrup
- 2 large eggs at room temperature
- 2 teaspoon vanilla extract
Instructions
- Preheat the oven to 375° F. Grease or line an 8x8 baking sheet with parchment paper and set aside.
- In a bowl, whisk together the oats, baking powder, salt, and cinnamon. Set aside.2½ cups rolled oats, 1 teaspoon baking powder, ½ teaspoon salt, 1 teaspoon cinnamon
- In a large bowl, whisk together the mashed bananas, milk, maple syrup, eggs, and vanilla until well combined. Pour in the oat mixture and mix until just combined.
