One Bowl Banana Bread Baked Oatmeal

This Banana Bread Baked Oatmeal deserves a permanent spot in your breakfast rotation. It comes together in one bowl with minimal cleanup, preps in minutes, and bakes in about 45 minutes, making it one of the easiest meal prep breakfasts you can make. Once it cools, just slice it up and you've got breakfast ready to reheat all week long. Serve it warm with maple syrup and fresh fruit and you'll be looking forward to mornings again!

Ingredients

  • cups rolled oats
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • cups mashed bananas about 3-4 bananas
  • cup milk
  • cup maple syrup
  • 2 large eggs at room temperature, whisked
  • 2 tsp vanilla extract

Instructions

  • Preheat the oven to 375° F. Grease or line an 8x8 baking sheet with parchment paper and set aside.
  • In a large bowl, whisk together the oats, baking powder, salt, and cinnamon.

  • Add to the oat mixture the mashed bananas, milk, maple syrup, whisked eggs, and vanilla, whisking until just combined. Add any additional add-ins at this time.
    1½ cups mashed bananas, 1½ cup milk, ⅓ cup maple syrup, 2 large eggs, 2 tsp vanilla extract
  • Pour this into the 8x8 pan and bake for 40-45 minutes, or until the center is set and top is golden brown. Allow it to cool for a few minutes before slicing and serving.

Notes

  • Store in an airtight container for 2-3 days at room temperature, or up to a week in the fridge
  • Can be frozen for up to 3 months. To defrost allow oats to sit in fridge overnight or at room temperature for a few hours.
  • Reheat in microwave, oven, toaster oven.
  • Serve alone or with fresh berries, maple syrup, honey, whipped cream.
