Start your day with a fun twist on a classic dessert- Banoffee Overnight Oats! Taking inspiration from the classic and indulgent flavors of banoffee pie, this easy, no-cook breakfast combines creamy oats with sweet bananas and rich toffee/caramel. I use store-bought caramel to save time, but you can easily make your own. It's the perfect balanced breakfast of wholesome and decadent, filling you up while satisfying that sweet tooth!

What could possibly start your day off better than eating a dessert-inspired breakfast?! In my opinion, truly nothing! While most mornings I'm a savory gal, sometimes you just need something sweet to start your day off on the right foot. These Banoffee Overnight Oats are just that, decadent, sweet, but best of all they are still a balanced and filling meal.
They are made with pantry staple ingredients, like rolled oats and chia seeds, plus some milk and greek yogurt for added protein! I love making these when I have some bananas I need to use up, since the mashed banana adds a touch of sweetness, just like in my Chocolate Banana Overnight Oats.
Just like my PB&J Overnight Oats and Berry Cheesecake Overnight Oats, these are easy to make, with only 5 minutes of prep time. Most of the heavy lifting is done by your fridge (because the oats sit in it overnight).
What even is "banoffee"?
Banoffee- or banana toffee- is a dessert flavor consisting of the combination of banana and toffee (or caramel)! It's popular in Europe, and originates from the British dessert, Banoffee Pie, which if you've never had, is DELICIOUSSS.
The flavor is sweet, creamy, and super rich. It's popular in pies, cakes, ice cream, and even coffee drinks. So I figured, why not make it into an oatmeal flavor! We should be able to enjoy this flavor combo for breakfast as well!

ingredients you need
- oats- I use old fashioned or rolled oats (they are the same thing). I find these best for overnight oats because they have the best texture after soaking up the milk & yogurt overnight.
- chia seeds
- milk- any milk works for this recipe!
- non-fat greek yogurt- I use non-fat plain greek yogurt most of the time, but a banana or caramel flavored yogurt would be a hit in this.
- maple syrup- feel free to swap this for another sweetener you prefer, or omit entirely, especially if the bananas you are using are super sweet.
- banana- an obvious, but important ingredient for this recipe.
- caramel- I used store-bought caramel for ease, but you could definitely make your own if you're feeling ambitious!
Want to make your own caramel sauce?
If you're feeling extra fancy and you want to impress anyone and everyone around you (including your pets)- then trying making your own caramel sauce! It's easier than you think and lasts in the fridge for awhile. Plus it's great in coffees, and drizzled on desserts!
What you need (this makes a large batch, so feel free to cut in half):
- 1 cup sugar
- ¼ cup water
- ⅔ cup heavy cream
- 3 tablespoon salted butter
- 1 tsp vanilla extract
- ¾ teaspoon sea salt
- In a large heavy bottom pot, heat the sugar and water together over medium heat, stirring until the sugar has dissolved and the mixture starts to bubble a little bit.
- Increase the heat to high and bring the mixture to a boil. Once boiling, stop stirring completely. Let the mixture continue to boil until it turns an amber color (can take 5-10 minutes). Remove from the heat completely and add the heavy cream slowly. This will make the mixture bubble up rapidly at first so be careful. Then add in the butter, vanilla, and salt one at a time.
- Pour the caramel sauce into a dish to allow it to cool. The caramel will thicken up a bit once it's cooled. You can store it in the fridge to thicken it up more.
How to make overnight oats



Making overnight oats is truly one of the easiest and quickest breakfasts in my opinion- it takes no time at all to whip up a hearty, filling, and delicious meal that just needs some time to sit in the fridge over night!
- Start by mixing the dry ingredients together
- Add in the wet ingredients, including the banana. If you want extra caramel flavor, you could also mix in more caramel during this step.
- store in a container with a lid and let it sit for at least 5 hours, preferably overnight.
And that's it! Easy-peasy breakfast in no time.

Storage and meal prepping
Store these overnight oats in the fridge for 4-5 days, mixing well before eating and adding any toppings (like fresh bananas) on right before consuming.
These oats can be eaten cold or warmed up in the microwave before eating.
To prep a larger batch of these, multiply the ingredients by how many servings you want to make. You can either store this in a large container and take individual portions each morning, or store them individual jars to grab and go.

Banoffee Overnight Oats
Equipment
Ingredients
- ½ cup old fashioned oats
- ½ tablespoon chia seeds
- ½ cup milk
- ¼ cup mashed banana
- ½-1 tablespoon caramel sauce plus extra for topping
- Banana slices for topping
- Whipped cream for topping
Instructions
- In a jar or bowl, mix together the oats & chia seeds.½ cup old fashioned oats, ½ tablespoon chia seeds
- Stir in the milk and mashed banana, until well combined. Gently mix in the caramel sauce.½ cup milk, ¼ cup mashed banana, ½-1 tablespoon caramel sauce
- Cover with a lid and place in the fridge for at least 5 hours, preferably overnight for the best texture.
- In the morning, give it a good mix before eating. Top with freshly sliced banana, caramel sauce, and whipped cream.Banana slices for topping, Whipped cream for topping
Notes
- Store in an airtight container in the fridge for 4-5 days. Add toppings before consuming.
