These Birthday Cake Overnight Oats are a fun & delicious way to celebrate your mornings! It tastes like a delicious slice of birthday cake but has wholesome ingredients like oats, chia seeds, and greek yogurt. Infused with flavors of vanilla, almond, and maple syrup for sweetener, this recipe is the perfect no-cook breakfast! Best part about it is that it takes only 5 minutes to prep the night before, and you have an easy grab-and-go breakfast.

Birthday cake for breakfast?! Who doesn't love the idea of that! If something has rainbow sprinkles involved, I am 100% into it- and these birthday cake overnight oats have just that.
With classic flavors of vanilla & almond extract, paired with wholesome rolled oats and greek yogurt, this recipe give that cake batter flavor- a sweet treat without the guilt! Although if you're a slice of cake for breakfast-kinda person, you won't see me judging!
As a lover of breakfast & breakfast recipe developer, I am always trying to come up with dessert-inspired oat recipes that are fun and easy to make, but are still made with great ingredients and set me up to have a successful day! My favorite other dessert-inspired oats are these cookies and cream oreo overnight oats & store-bought cookie dough overnight oats (can you tell I love sweets).

ingredients you'll need
- old-fashioned oats- rolled oats work best for overnight oats because they soak up the liquid and make the perfect texture. Avoid using quick oats because they get too mushy, or steel-cut because they are too hard.
- chia seeds
- milk- any milk works for these- dairy or non-dairy!
- greek yogurt- I used vanilla flavored yogurt for this because I really want that vanilla flavor to come out! Plain yogurt works as well.
- maple syrup- using this to naturally sweeten our oats. You can swap for another sweetener you enjoy, like honey or brown sugar.
- vanilla extract
- almond extract
- sprinkles
If you're looking to add some extra protein to your mornings, add a half to full scoop of vanilla protein powder to these. Be sure to use a high quality powder though, as some can have a chalky taste which would not be great in these overnight oats.

What makes these taste like birthday cake?
The addition of both vanilla AND almond extract + sprinkles (obviously) gives these oats that classic birthday cake flavor we know and love! We only use a little bit of both the vanilla and almond extract but it really gives it that
Sprinkles are a big part of birthday cake flavored treats, and we obviously aren't going to skip on them in here! I love using regular multi-colored sprinkles over something like nonpareils because I find that the nonpareils bleed very easily. If you are making a few batches of these, I always recommend adding the sprinkles right before eating so they don't get mushy!
I always love to add extra sprinkles and whipped cream on top to give it that extra pizzaz- I don't know why but it makes me feel fancy in the mornings! Other toppings that would go great would be a drizzle of nut butter, some chopped nuts, or even mini chocolate chips.
How to make



These funfetti oats couldn't be easier to make-
- add the oats and chia seeds into a bowl or container with a lid
- mix in the wet ingredients
- add the sprinkles and tada!
That is truly all it takes! The prep for these is seriously so easy, so there is not excuse why you don't have a fun & filling breakfast the next morning!
Storing & meal prepping
These oats will stay fresh in the fridge for 4-5 days. If you plan on making these days ahead, I would wait and add the sprinkles before eating so they don't bleed and get mushy in the oats.
To meal prep multiple batches of these oats, you can multiply the ingredients by how many you want to make. I usually make them in individual overnight oat jars (mostly for ease of grabbing them in the morning), but you can also just make a large batch in a bowl or container and scoop out the servings as the week goes.

Birthday Cake Overnight Oats
Equipment
Ingredients
- ½ cup old fashioned oats
- ½ tablespoon chia seeds
- ½ cup milk
- ¼ cup vanilla greek yogurt
- ½ tablespoon maple syrup
- ¼ teaspoon vanilla extract
- ⅛ teaspoon almond extract
- 1-2 tablespoon rainbow sprinkles
- whipped cream for topping
Instructions
- In a jar or bowl, add together the oats and chia seeds.½ cup old fashioned oats, ½ tablespoon chia seeds
- Stir in the milk, greek yogurt, maple syrup, vanilla, and almond extract until well combined. Add sprinkles and mix.½ cup milk, ¼ cup vanilla greek yogurt, ½ tablespoon maple syrup, ¼ teaspoon vanilla extract, ⅛ teaspoon almond extract, 1-2 tablespoon rainbow sprinkles
- Cover with a lid and place in the fridge for at least 4-5 hours, preferably overnight for the best texture.
- In the morning, give it a good mix before eating. Top with extra sprinkles and whipped cream.
Notes
- Add extra maple syrup for more sweetness.
- Add up to a whole scoop of vanilla protein powder to make these high-protein.
- Add sprinkles right before eating so they don't bleed into the oats if you are making more than a day ahead.
- Store these in an airtight container in the fridge for up to 5 days.
- If oats seem dry when going to eat them, add extra splash of milk.
