These creamy & easy Strawberry Shortcake Overnight Oats are bursting with fresh, sweet strawberries and vanilla, making them a delicious and filling breakfast for everyone. Prepping these only takes about 5 minutes total, but don't forget to account for the time they have to sit in the fridge, hence the name "overnight" oats! This recipe is perfect to make in the beginning of the week and grab on your way out the door before a busy day.

Strawberry Shortcake in the form of oatmeal?? Say LESS! I love anything strawberry flavored so when I was thinking of a recipe flavor to come up with for overnight oats, strawberry shortcake popped into my mind. I love the vanilla and sugary taste that goes with strawberry shortcake, so adding them into oats makes it a well-rounded, yet delicious breakfast or brunch option. The only thing that's missing here is the biscuit!
These overnight oats are incredibly easy to prep, most of the time is just waiting for the oats to soak up the liquid overnight. Actual work time is about 5 minutes- which who can really complain about a 5 minute prep recipe. Not I!
I love overnight oats and am always trying to recipe develop and come up with new fun flavor ideas- Some of my current favorites are my raspberry overnight oats and these cookies and cream overnight oats or birthday cake overnight oats (for when I'm feeling like having dessert for breakfast).
why you'll love these overnight oats
- Strawberry shortcake is a delicious flavor and who wouldn't want to feel like they are eating a dessert for breakfast. These oats are perfectly sweet without actually having any actual cake in them (now that's an idea).
- You don't need any fancy ingredients, just some simple pantry staples plus good ol' strawberries
- You can add fresh strawberries to this recipe, or if you're feeling like you want something sweeter, you can macerate them (more tips on that below)
ingredients

- Oats: I recommend using old fashioned oats (or rolled oats- they're the same thing) over quick oats or steel cut oats for this recipe. Rolled oats soak up the liquid the best!
- Chia Seeds
- Milk: Any milk will work in this recipe.
- Greek yogurt
- Honey: I used honey as my sweetener in this recipe, but you can swap for another sweetener you enjoy.
- Vanilla: a small amount of vanilla extract really gives us that traditional vanilla flavor you find in shortcake.
- Strawberries
Fresh or frozen strawberries?
I typically use fresh strawberries in this recipe because frozen strawberries typically come in whole, large pieces that aren't easy to chop up. Strawberries are in peak season typically in April, May, and June, so buying them in the winter can be tough.
For fresh strawberries, make sure you find a batch at the store that is a dark ruby red in color, with no green or white tips. If you check under the strawberries "little leafy hat", you can see if the color is red or white/green. Pick ones that are that ruby red colors, for these will be the sweetest and juiciest ones!
If you love frozen berries or have a lot in the freezer to use up, my overnight oats with frozen fruit is the recipe for you.
step by step instructions


1- In a jar or bowl, mix together the oats and chia seeds.
2- Mix in the milk, greek yogurt, honey and vanilla extract.
3- Add in the diced strawberries, mixing until everything is fully combined.

4- Cover with a lid and place in the fridge for at least 5 hours.
5- The next morning, take it out of the fridge and stir. Add extra fresh strawberries and whipped cream, and enjoy!
How to make Macerated Strawberries
If your strawberries aren't super sweet, you can macerate them, aka let them sit in sugar to pull out the sweet juices. Macerating is the process of soaking strawberries in sugar to enhance the flavor and bring out the natural juices. It's pretty dang easy to do, so don't let the name scare you away!
To do this, slice up ½ cup strawberries and add them to a bowl. Pour 1-2 tablespoons of granulated sugar on top, and mix until combined. Cover and let this sit in the fridge for at least 20 minutes, and up to overnight. You should get juicy, sweet strawberries that would be amazing mixed into these oats! Don't forget to add the juicy syrup!

Homemade Whipped Cream
If you're feeling absolutely WILD, making your own whipped cream would take this recipe to next level and I promise, it's not that hard to do!
To make homemade whipped cream, just add ½ cup of cold heavy whipping cream to a bowl with 1 tablespoon of powdered sugar and ¼ teaspoon of vanilla extract. Whip this using an electric mixer starting on low, then turning up to high speed, until stiff peaks form (should take a minute or two). You can store this in the fridge for a couple of days in an airtight container.
Make ahead instructions
You can prep these overnight oats ahead of time and they will stay good in the fridge (in an airtight container) for up to 5 days. I like to add fresh strawberries on top the morning that I am consuming them.
You can eat overnight oats cold straight from the fridge, or heat them up in a microwave safe container.

- ¼ cup plain or vanilla greek yogurt
- 1-2 teaspoon honey
- ½ teaspoon vanilla extract
- ½ cup chopped strawberries plus extra for topping
- Whipped cream for topping
