These creamy & easy Strawberry Shortcake Overnight Oats are bursting with fresh, sweet strawberries and vanilla, making them a delicious and filling breakfast for everyone. Prepping these only takes about 5 minutes total, but don't forget to account for the time they have to sit in the fridge, hence the name "overnight" oats! This recipe is perfect to make in the beginning of the week and grab on your way out the door before a busy day.
In a jar or bowl, mix together the oats and chia seeds.
½ cup old fashioned oats, ½ tbsp chia seeds
Mix in the milk, greek yogurt, honey and vanilla extract.
½ cup milk, ¼ cup plain or vanilla greek yogurt, 1-2 tsp honey, ½ tsp vanilla extract
Add in the diced strawberries, mixing until everything is fully combined.
½ cup chopped strawberries
Cover with a lid and place in the fridge for at least 5 hours.
The next morning, take it out of the fridge and stir. Add extra fresh strawberries and whipped cream, and enjoy!

Store overnight oats in the fridge for up to 5 days in an airtight container.
To macerate strawberries: slice up 1/2 cup strawberries and add them to a bowl. Pour 1-2 tablespoons of granulated sugar on top, and mix until combined. Cover and let this sit in the fridge for at least 20 minutes, and up to overnight. Add these to your oats and on top!
