Why You Need These Strawberry Rice Krispie Treats
- You only need 6 ingredients to make them!
- This recipe only needs 10 minutes of hands on time, then you just need to let them cool completely before slicing.
- Drizzle with melted white chocolate or add sprinkles!
- I love making these for Valentine’s Day since they’re naturally pink, but they’re perfect to make all year round.
Recipe Ingredients
- Freeze-dried strawberries: you can find these at most grocery stores in the dried fruit and nut section. Make sure you’re using freeze-dried strawberries and not frozen! I like
- Rice Krispies: feel free to use whatever brand of crisp rice cereal you like!
- Mini Marshmallows: you can use regular marshmallows but just note that they will take longer to melt. You would also need to cut up 1 cup of the marshmallows to be added later in the recipe.
- Salt: don’t skip this out, you always need some salt to balance the sweetness.
Step-by-Step Instructions
Step 1: Line a 9×13-inch pan with parchment paper or grease with non-stick spray and set aside.
Step 2: Blend the freeze-dried strawberries in a blender or food processor until a fine powder forms.
Step 3: Melt the butter in a large pot over medium heat. Add the marshmallows (but leave 1 cup to the side) and stir until melted.
Step 4: Remove from the heat and add the strawberry powder, salt and vanilla extract. Stir everything together.
Step 5: Stir in the rice krispie cereal and the extra cup of mini marshmallows. Spread this mixture into your prepared pan and use a greased spatula to flatten the top into an even layer.
Step 6: Let the treats cool down for at least 30 minutes before slicing into bars and serving.
Tips and Tricks
- You can use a 9x9 pan instead of a 9x13 pan if you want extra thick rice krispie treats!
- Feel free to swap out freeze-dried strawberries for blueberries or raspberries.
- Drizzle the strawberry treats with white chocolate and sprinkle over some fun sprinkles.
- Amp up the flavor by using brown butter!
- I recommend buttering your pan before you get started on this recipe. The mixture will set pretty quickly so you want to have that buttered pan ready to go!
- Let the strawberry rice krispie treats cool completely before slicing into bars.
Storing & Freezing
Store the sliced rice krispie treats in an airtight container at room temperature, I don’t recommend storing them in the fridge as they’ll get quite hard. To freeze, place in an airtight container with wax paper between each bar for up to 2 months.
