Recipe Ingredients
Here are some notes on a few ingredients- please see the full ingredient list in the recipe card below!
- Mini Marshmallows: I love using mini marshmallows since they melt faster and you can add a few later in the recipe so you get gooey marshmallows in every bite! You can use regular marshmallows if that’s all you have on hand.
- Rice Krispie Cereal: feel free to use a store-brand of rice cereal.
- Chocolate: I used a mixture of semi-sweet chocolate and white chocolate. I recommend using bars instead of chips as they melt better.
Step-by-Step Instructions
Step 1: Line a 9x13 inch pan with parchment paper and set it aside.
Step 2: In a large pot, melt the butter over medium heat. Once completely melted, add the mini marshmallows (reserving 1 cup to the side) and stir until melted.
Step 3: Remove the pan from the heat and stir in the vanilla and salt.
Step 4: Stir in the cereal and the extra cup of mini marshmallows. Spread the mixture into your prepared pan and use a greased spatula to flatten the top of the treats.
Step 5: Let the mixture cool in the pan for at least 30 minutes, then cut into bars.
Step 6: Melt the chopped chocolate in a microwave safe bowl in 30 second increments, making sure you stir well after each increment.
Step 7: Dip one side of each rice krispie treat into the melted chocolate, shaking off any excess. Place the treats on parchment paper to dry.

If you don’t want to dip the rice krispie treats you can drizzle the chocolate on top instead!
I used semi-sweet chocolate and white chocolate, but you can use whatever chocolate you like.
There are a few reasons why they might be hard and not soft and gooey! Make sure you’re using fresh marshmallows and not stale ones. Be careful not to overcook and burn the marshmallows in the pan, and don’t pat them down too hard with your greased rubber spatula

Storing & Freezing
Store these rice krispie treats dipped in chocolate in an airtight container at room temperature for up to 3-4 days. The first 2-3 days they have a softer texture, after that they’re fine to eat but they might be a bit chewier! To freeze, place a piece of parchment paper between each rice krispie treat and freeze in an airtight container for up to 2 months.

Chocolate Dipped Rice Krispie Treats
Ingredients
- ½ cup unsalted butter
- 8½ cups rice krispie cereal
- 20 oz mini marshmallows 1 cup set aside
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 16 oz chocolate bar, chopped I used semi-sweet & white chocolate
Instructions
- Line a 9×13-inch pan (or 9×9-inch pan for thick rice krispie treats) with parchment paper and set aside.
- In a large pot, melt the butter over medium heat. Once fully melted, add the marshmallows (reserving 1 cup for later) and stir until completely melted.
- Remove from heat and add the vanilla and salt. Stir until well combined.
- Gently mix in the cereal and the extra 1 cup of marshmallows using a rubber spatula. Quickly spread the mixture into the prepared pan and press gently with the spatula to flatten into an even layer.
- Cool in pan for at least 30 minutes before cutting into bars.
- Melt the chopped chocolate in a microwave-safe dish in 30 second increments, stirring well in between each time. Melt only until there are no clumps of chocolate left.
- Dip one side of the rice krispie treats in the chocolate, shaking off any excess chocolate, and place on parchment paper to dry.
