Why You'll Love This Recipe
- It's so easy to make you'll be asking yourself why you are still buying granola from the store!
- You can eat it on its own as a snack, topped with some milk like cereal, or my favorite on top of yogurt with some berries.
- Makes a large batch so you'll have plenty to top your yogurt bowls and smoothies throughout the week, plus it holds up great in the freezer for months.
- You can add really anything to this to make it your own, I love dried blueberries but other fruits/nuts work great!
- Makes a great gift! I love making a batch of this and bagging it up to hand out to friends.
Ingredients
- Oats- make sure to use old fashioned/rolled oats for this recipe.
- Sunflower seeds- I love the taste and texture of these in my granola.
- Flaxseed mill- this can be left out but I like to add it for extra pizzazz!
- Coconut flakes- make sure to use unsweetened coconut, not the sweetened kind!
- Coconut oil- can be swapped for any neutral oil or even butter.
A full ingredient list with exact amounts can be found in the recipe card below.
How to Make This Recipe
This recipe is just a few simple steps. Follow along below.
In a large bowl, mix the oats, sunflower seeds, coconut, and flaxseed meal.
Add in the melted coconut oil, maple syrup, and vanilla. Mix until all the oat mixture is evenly combined.
Spread onto parchment paper lined baking sheet and baked for 20 minutes, tossing halfway through.
Allow the granola to cool on the pan after removing from oven, it hardens as it cools. Add any add-ins.
If adding dried fruit or chocolate chips, let the granola cool completely first before tossing them in.
Kelly's Top Tip
Press the granola down after it comes out of the oven so as it cools it will dry in larger chunks. If you don't want any clumps, give it another toss once it comes out of the oven and then let it cool.
Recipe Substitutions and Variations
- Swap the dried blueberries for something else you love- cranberries, raisins, dried mango chunks, chopped nuts, or chocolate chips/chunks. Feel free to mix and match!
- Swap the coconut oil for another neutral oil of your choosing.
- Make it nut free- don't add any nuts to your granola (and leave out the sunflower seeds if needed). Adding things like dried fruits or chocolate chips would be a great addition instead!
- This make a pretty large batch so feel free to cut it in half if needed!
Equipment Needed
Having a high quality baking sheet makes a big difference when baking! I've used this brand for years at it holds up great.
Make sure to line your sheet pan with parchment paper before baking for easy removal and clean up! I love these parchment paper sheets because they fit perfectly and I don't have to fuss with ripping parchment paper.
A large mixing bowl is needed to mix this batch of granola!
How To Store
Homemade granola will stay good in an airtight container for up to a week. It can also be frozen for up to 3 months in an freezer safe container.
