As an oatmeal lover and a breakfast recipe developer, these almond butter overnight oats are the perfect way to start any morning! They are packed with flavor, use simple ingredients to make, and are the quick breakfast for those on the go!

- It's one of the easiest breakfasts to make and requires only 6 ingredients that you probably already have in your pantry and fridge!
- It's perfect for busy weekdays because you can prep it at night (only takes 5 minute to make) and then bring on the go with you in the morning.
- Almond butter is the main flavor here but it's easily swappable for another nut butter of your choosing! I love adding peanut butter or sunflower butter.
ingredients
- Oats: I prefer using old-fashioned oats/rolled oats for these. You could also use quick oats. I don’t recommend using steel cut oats in this recipe as they won't soak the liquid of correctly and aren't the best for overnight oats.
- Chia Seeds: this is going to help thicken up the overnight oats
- Vanilla Extract: I love adding this to enhance the flavor along side the almond butter! I love using pure vanilla extract for best results.
- Greek Yogurt: I typically use nonfat plain greek yogurt in my oats recipes, but vanilla greek yogurt would be perfect for this as well!
- Milk: any milk of choice works with this recipe- I've used oat milk, coconut milk, cashew milk, soy milk, almond milk. aside from plant-based milk, I also love to use regular milk. I really enjoy using Fairlife milk.
- Almond butter: the star of the show! You can use any almond butter you enjoy, typically they are creamy enough that they mix into the oats easily. If you find your almond butter to be pretty thick, you can melt it in the microwave for a few seconds before adding it to the recipe just to make it easier to mix.
Additions and Substitutions
- Maple Syrup: if you want your oats to be a bit sweeter, add in up to a tablespoon of pure maple syrup, or swap for honey, agave syrup, brown sugar, or coconut sugar.
- Protein Powder: Add ½-1 scoop of vanilla or chocolate protein powder to this recipe.
- Oats: feel free to swap out old fashioned oats for quick oats. Just don't use steel cut!
- Nut Butter: swap the almond butter for another nut butter that you love! Peanut butter would be great in this recipe.
- Chocolate: if you're a chocolate lover, add a teaspoon of cocoa powder to the oats before mixing in the wet ingredients to make these chocolate almond butter overnight oats. Or add in mini chocolate chips!
- Sliced almonds: add these on top or even into your oats for a little extra texture. You could also use whole almonds!
step by step instructions
Step 1: Mix together the oats and chia seeds in a jar or bowl.
Step 2: Stir the milk, greek yogurt, and vanilla extract into the oat mixture.
Step 3: Finally, add in your almond butter and mix until fully combined throughout the oats.
Step 4: Cover with a lid and place in the fridge for at least 5 hours, or overnight. The next morning, give it a good stir and top with a drizzle of almond butter and sliced almonds.
Tips & Notes
- If your overnight oats seem dry the next day, add in an extra splash of milk and mix.
- You can use dairy-free yogurt and dairy-free milk in this recipe if you need to.
- If you want to meal prep these, make a big batch and store in a large container or several jars. Sometimes I make a large batch and just scoop out a serving in the morning!
- I use these overnight oat glass jars, but a mason jar works perfectly as well, as well as tupperware containers! Anything that can be stored air-tight with a lid in the fridge.

Storage and Reheating Instructions
- Store your overnight oats in an airtight container in the fridge for up to 5 days.
- Overnights oats can be eaten cold or warmed up in the microwave.
- You can freeze these in a freezer-safe container for up to 3 months. To defrost, allow them to sit in the fridge overnight.

Almond Butter Overnight Oats

Ingredients
- ½ cup old fashioned oats
- ½ tablespoon chia seeds
- ½ cup milk
- 2 tablespoon greek yogurt
- ½ teaspoon vanilla extract
- 2 tablespoon almond butter
Instructions
- In a jar or bowl, mix together the oats and chia seeds.½ cup old fashioned oats, ½ tablespoon chia seeds
- Stir in the milk, greek yogurt, and vanilla extract until well combined.½ cup milk, 2 tablespoon greek yogurt, ½ teaspoon vanilla extract
- Add in the almond butter, mixing until fully incorporated.2 tablespoon almond butter
- Cover with a lid and place in the fridge for at least 5 hours, preferably overnight for the best texture.
- In the morning, give it a good mix before eating. Top with extra almond butter and sliced almonds.
Notes
- Can be stored in the fridge for up to 5 days.
- Add a splash of milk if they seem dry after sitting in the fridge overnight.
- If your almond butter is thick, melt it in the microwave for a few second before adding it the oats to make it easier to mix in.
