This is the perfect breakfast recipe to make when you have leftover pumpkin puree or if you’re a pumpkin lover! They taste like fall in a jar!
Overnight oats are one of my favorite breakfasts to meal prep! Just like my cookies and cream oreo overnight oats and almond butter overnight oats, these pumpkin spice overnight oats are a super simple breakfast recipe that you can prep for the week! Plus, it’s perfect for pumpkin season when all you want is pumpkin flavored everything (I know that's you).
As a breakfast blogger, you know I love developing fun, delicious and easy breakfast recipes. And these pumpkin OO are just that. In the fall months I usually have some leftover canned pumpkin after making recipes like my pumpkin banana muffins, pumpkin french toast casserole, or pumpkin coffee cake, so these overnight oats are perfect to help use it up!
why you should make these
- Meal Prep: this breakfast recipe is perfect for meal prep. You can make several jars of it and keep in the fridge all week long, great for busy mornings.
- Leftover Pumpkin: I don’t know about you, but I usually have some leftover canned pumpkin in my fridge in the lead up to Thanksgiving! This pumpkin spice overnight oats recipe is perfect to use up any leftover pumpkin and is the perfect fall breakfast.
- Pumpkin Pie for Breakfast: if you love a slice of pumpkin pie, then you’re going to love this recipe! It’s packed with delicious pumpkin pie flavor thanks to pumpkin puree and pumpkin pie spice.
ingredients

- Oats: I recommend using old-fashioned oats or rolled oats. I don’t recommend using steel cut oats for this recipe since it won’t work well with the texture! The rolled oats will soak up the milk, giving you creamy overnight oats. I don’t recommend using quick oats because they make the overnight oats too mushy.
- Milk: I’ve tested this recipe with regular milk and dairy free milk, so feel free to choose whatever milk you like!
- Greek Yogurt: I love adding greek yogurt to my overnight oats! It really thickens up the oats and bonus, it gives you more protein!
- Pumpkin Pie Spice: a lot of the pumpkin pie flavor comes from pumpkin pie spice, so don’t skip this out. It’s a delicious and warm combo of cinnamon, nutmeg, ginger and cloves.
- Pumpkin Purée: can’t have pumpkin pie overnight oats without pumpkin puree! I have only tested this recipe with canned pumpkin and not homemade pumpkin puree. I don’t recommend using pumpkin pie filling because that has added sugars and spices!
- Maple Syrup: adding a bit of maple syrup is going to help sweeten the overnight oats.
- Chia Seeds: Not only do chia seeds give you a ton of fiber, but they also thicken up the overnight oats! You’ll get a creamier texture.
instructions

Step 1: In your jar or bowl, mix together the oats, chia seeds and pumpkin spice.
Step 2: Stir in your milk of choice, plain greek yogurt, maple syrup and pumpkin puree into the oat mixture until smooth.

Step 3: Cover the mason jar or bowl with a lid and place in the fridge for at least 5 hours, but preferably overnight.
Step 4: The next morning, give it a good stir. Top with whipped cream, chopped pecans and a dash of ground cinnamon or pumpkin pie spice.
Toppings & Add-ins
If you want to bump up the protein, add a scoop of your favorite protein powder!
I love adding different toppings to the pumpkin pie overnight oats in the morning! Some of my favorite toppings are chopped pecans, pumpkin seeds, a sprinkle of brown sugar, dried fruit, crushed graham crackers, or a drizzle of almond butter.
Serving Size
This recipe makes enough overnight oats for 1 person. Feel free to multiply it to make as many servings as you want for the week!

Storage and Reheating Instructions
- I recommend keeping the pumpkin overnight oats in an airtight container in the fridge for up to 5 days.
- These can be eaten cold out of the fridge, or warmed in the microwave.
- Can be frozen in freezer-safe container for up to 3 months. To defrost, allow to sit in fridge overnight or at room temperature until soft.

Simple Pumpkin Overnight Oats with Pumpkin Pie Spice
Equipment
Ingredients
- ½ cup old fashioned oats
- ½ tablespoon chia seeds
- ½ teaspoon pumpkin pie spice
- ½ cup milk
- 2 tablespoon greek yogurt
- 2 tablespoon pumpkin puree
- 2 teaspoon maple syrup
- pecans, cinnamon/pumpkin pie spice, whipped cream for topping
Instructions
- In a jar or bowl, mix together the oats, chia seeds, and pumpkin pie spice.½ cup old fashioned oats, ½ tablespoon chia seeds, ½ teaspoon pumpkin pie spice
- Stir in your milk of choice, greek yogurt, maple syrup, and pumpkin puree until well combined.½ cup milk, 2 tablespoon greek yogurt, 2 tablespoon pumpkin puree, 2 teaspoon maple syrup
- Cover with a lid and place in the fridge for at least 5 hours, preferably overnight for the best texture.
- In the morning, give it a good mix before eating. Top with whipped cream, chopped pecans, and a dash of cinnamon.
