Simple Pumpkin Overnight Oats with Pumpkin Pie Spice

Ingredients

  • ½ cup old fashioned oats
  • ½ tablespoon chia seeds
  • ½ teaspoon pumpkin pie spice
  • ½ cup milk
  • 2 tablespoon greek yogurt
  • 2 tablespoon pumpkin puree
  • 2 teaspoon maple syrup
  • pecans, cinnamon/pumpkin pie spice, whipped cream for topping

Instructions

  • In a jar or bowl, mix together the oats, chia seeds, and pumpkin pie spice.
    ½ cup old fashioned oats, ½ tablespoon chia seeds, ½ teaspoon pumpkin pie spice
  • Stir in your milk of choice, greek yogurt, maple syrup, and pumpkin puree until well combined.
    ½ cup milk, 2 tablespoon greek yogurt, 2 tablespoon pumpkin puree, 2 teaspoon maple syrup
  • Cover with a lid and place in the fridge for at least 5 hours, preferably overnight for the best texture.
  • In the morning, give it a good mix before eating. Top with whipped cream, chopped pecans, and a dash of cinnamon.

Notes

  • Can be stored in the fridge for up to 5 days. Mix and add toppings before consuming. 
  • I love adding different toppings to the pumpkin pie overnight oats in the morning! Some of my favorite toppings are chopped pecans, pumpkin seeds, a sprinkle of brown sugar, dried fruit, or a drizzle of almond butter.
