This bacon and egg grilled cheese sandwich is everything you could possibly want in a breakfast sandwich- crispy bacon, fried eggs, and melty cheese pressed together between buttery toasted slices of bread. It's simple yet comforting, and perfect for both slow mornings or breakfast-for-dinner vibes. This recipe is a great example of how the classics can get better if you just add bacon!

There is something deeply comforting about a grilled cheese sandwich. I'm not sure if it's pure nostalgia, or just the comfort of warm cheese and bread, but I can always count on this little sandwich to brighten my day and fill my tummy.
As a breakfast lover and recipe creator, I was testing this recipe and I wanted it to feel like a breakfast sandwich flavor-wise, but in my mind it needed to be made like a classic grilled cheese. The melted cheese inside and the buttered bread that gets toasty and golden brown are both so important for this sandwich!
I love this breakfast grilled cheese sandwich because it's a mix of everything I love- toasty, melty cheese plus eggs & bacon! Plus it's so easy to whip up in under 20 minutes, which is always a plus on busy weekdays.

ingredients you need

- bacon
- eggs- I think fried eggs are best for this recipe but if you prefer scrambled go for it!
- cheese- I used good ol' american cheese slices since I wanted a classic taste here, but really any cheese you enjoy would taste great on this sandwich.
- bread- I used sourdough slices for my grilled cheese- any bread you have will work though. Use brioche for a sweet-savory vibe, or rye if you want more a deli feel.
- salt & pepper
- butter- just using a bit to butter our toast slices. Could easily swap this for mayo!
How to make

start by cooking up your bacon and eggs.

toast in a pan until cheese is melted & the bread is golden brown on each side.
Making grilled cheese is easy as can be! This just adds a few extra steps to make the bacon and the eggs before putting it all together into one cheesy, delicious sandwich.
- start by cooking the bacon to desired crispiness
- next cook your eggs- I like frying them to over-medium or over-hard for this recipe, but again you can cook them however you enjoy them. want the yolks runny? go for it! It's like making it's own little sauce for the sandwich.
- butter the outside of your sandwich bread slices
- assemble the sandwich- layer the cheese, egg, and bacon slices
- cook the grilled cheese sandwich until golden brown and crispy on each side!
mix things up
ok if you're thinking "hmm this looks good but maybe a little boring", I challenge you to think outside the box!
- why use one cheese when you could use 2 or 3? There's a restaurant near me that makes banging grilled cheese using 3 types- cooper sharp, asiago, and stracciatella cheese (which is a creamy, milky italian cheese that is so good).
- add arugula, spinach, microgreens, or even some pesto to your sandwich for some color!
- how about some roasted red peppers or tomatoes? Both would add some major flavor. Be sure to drain any oil or liquid they come in though so it doesn't make your sandwich soggy.
- add some heat by using some chili crisp or hot honey either inside or on top.
- instead of using butter on the bread, spread garlic aioli/mayo on the outside for more flavor. You're bread will still toast up perfectly!
- Instead of regular bacon, how about maple glazed bacon, applewood smoked bacon, or even some bacon jam?

Storage and Reheating
If you plan on whipping up this grilled cheese sandwich and saving it for later, let the sandwich cool before wrapping it in tinfoil or placing in an airtight container. It'll stay good in the fridge for 2-3 days.
To reheat, you can warm it in the microwave, although I find this can make your bread a little soggy. I prefer to pop it back into a frying pan over medium-low heat until warmed throughout!

Crispy Bacon and Egg Grilled Cheese Sandwich
Ingredients
- 1-2 slices bacon
- 1-2 large eggs
- salt & pepper to taste
- 1 tablespoon butter
- 2 slices sourdough bread
- 2-4 slices cheese
Instructions
- In a skillet, fry bacon over medium heat until crispy, about 8-10 minutes. Remove from the skillet and place on a paper towel-lined plate.1-2 slices bacon
- In the same skillet, crack the two eggs and fry thoroughly, about 4-5 minutes. Season with salt & pepper to taste.1-2 large eggs, salt & pepper
- Spread the butter on one side of each piece of bread. On the un-buttered side of the bread, layer the cheese, bacon, and eggs, topping with the other side of bread (butter side up).1 tablespoon butter, 2 slices sourdough bread, 2-4 slices cheese
- Place the sandwich in the fry pan and cook over medium heat for 2-3 minutes on each side, until golden brown and cheese is melted.
Notes
- store this sandwich in an airtight container or wrapped in tinfoil in the fridge for 2-3 days. Allow the sandwich to cool before storing.
- reheat by toasting in a pan over medium-low heat until warmed throughout.
