This delicious, oven-baked Bacon Hash Brown Breakfast Casserole is the perfect meal for your next brunch get-together to feed a crowd! Made with frozen hash browns, crispy bacon, eggs, and cheese, this easy breakfast bake is packed with flavor that the whole family will love. It can also be prepped the night before and baked in the morning for a head start.

If you need to know anything about me, know that I am a breakfast casseroles #1 fan. I should really become a spokesperson for why breakfast casseroles are the best. They are easy to make, the whole family loves them, they're perfect for feeding a crowd, you can prep them the night before and bake in the morning, and there's endless ways to make them. My favorites (besides this one of course)- my croissant bacon egg and cheese casserole & this bacon egg and cheese biscuit casserole! There's nothing quite like a cheese-y, potato-y, bacon-filled breakfast bake to start your morning off on the right foot. I love to whip this up if I have friends or family coming into town, or if I want something to prep and reheat throughout the week. I made this last weekend and my sister ended up eating almost the entire thing while she was visiting. Can confirm, it's delicious!

ingredients needed

- bacon- obviously! Any kind of bacon works here, just be sure to cook it to your desired crispiness before adding it to the casserole. Breakfast sausage would also be delicious in this recipe.
- butter
- yellow onion- optional if onions aren't your thing. You could also add other veggies like bell pepper, spinach,
- eggs
- milk- any type of milk works in this recipe.
- salt, pepper, onion powder, garlic powder- for flavor, duh!
- dijon mustard- this may seem like an odd addition but I use this in my other savory breakfast casseroles and it's always so delicious. It can be left out though if you don't have dijon!
- hash browns- you can find frozen shredded hash browns in the freezer section of most grocery stores.
- cheese- I used sharp cheddar for this recipe. I HIGHLY suggest freshly grating a block of cheese, it's a little extra work but the cheese melts so much better than the pre-packaged shredded cheese!

Making bacon in the oven (aka the easy way)
I feel like a broken record writing this on my recipes, but if you haven't started baking your bacon (bake & bacon, see what I did there...) in the oven- what are you DOING?! Seriously, it makes life so much easier! Plus I don't have to spend extra time after cleaning my stove top of bacon grease.
Just preheat your oven to 400℉. Lay the bacon out on a tin foil-lined baking sheet and bake in the oven for about 13-18 minutes, or until crispy (however crispy you like). Remove from the oven and place the bacon on a paper towel-lined plate. That's it! Let the bacon grease cool in the tin foil and then just plop that in the trash later.
How to make

Add frozen hash browns to your baking dish. Top with the bacon, onions, and cheese.

Pour the egg mixture and mix it up. Sprinkle with the leftover cheese for an extra cheesy top!

Bake until the casserole is crispy and golden on top, and the eggs are cooked through in the center.
Making this casserole is more about prepping and less about actually cooking it. Once it goes in the oven, you just have to sit and wait for a deliciously filling breakfast to be ready.
- Start by cooking the bacon until it reaches your desired crispiness. Oven-baked is the way to go for large amounts of bacon.
- Saute the onion (and if adding other veggies like bell peppers or spinach, saute them here as well).
- Whisk together the eggs, milk, and spices until combined.
- Add all this to your casserole dish. I like to add the hashbrowns first (still frozen), then the bacon, onion, and cheese. Pour the eggs over top and give it a little mix. Top with more cheese (because why not).
- Bake and enjoy!!
Don't want a whole casserole? Make half!
Sometimes you don't need an entire casserole the size to feed a small family. As someone who only cooks for 2, I like to half this recipe and make it in an 8x8 square pan. Baking times will be a little less, around 35-45 minutes instead. Same easy recipe, just less leftovers to scarf down!

Making Ahead, Storing, and Reheating
This hash brown breakfast casserole is perfect to prep and make the night before! Follow the steps below all the way until you pour the eggs into the baking dish & top with the extra cheese. Cover the casserole with tin foil and place in the fridge overnight. In the morning, remove the casserole from the fridge at least 30 minutes before baking to bring it back to room temperature. Preheat your oven and continue with baking. So easy!
Once this cooked casserole is completely cooled, place slices in a freezer-safe container and freeze for up to 2 months. To defrost, place in the fridge overnight or let it sit at room temperature.
I typically reheat single slices in the microwave until warmed through, about a minute or so. If you want to reheat a large portion, place it back in the oven until warmed through!

Bacon Hash Brown Breakfast Casserole

- 1 lb bacon
- 1 tablespoon butter or oil
- 1 small yellow onion diced
- 20 oz frozen hash browns
- 12 large eggs
- 1 cup milk
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon dijon mustard
- 2 cups shredded cheddar cheese
- fresh chives for garnishing (optional)
Instructions
- Preheat the oven to 400℉. Lay the bacon on a tinfoil-lined baking sheet and bake in the oven for 13-18 minutes, or until crispy. Remove and place bacon on a paper-towel lined plate. Once cooled, chop into small pieces.1 lb bacon
- Add 1 tablespoon butter to a fry pan. Cook onions over medium heat until translucent, about 5-8 minutes. Remove from heat and set aside.1 tablespoon butter or oil, 1 small yellow onion
- Lower oven to 350° F. Grease a 13x9 dish and place aside.
- In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, pepper, and dijon mustard until fully combined. Set aside.12 large eggs, 1 cup milk, 1 teaspoon onion powder, 1 teaspoon garlic powder, ¾ teaspoon salt, ½ teaspoon black pepper, 1 tablespoon dijon mustard
- Spread the frozen hash browns on bottom of the greased baking dish. Sprinkle 1½ cup of cheese, chopped bacon, and the cooked onions on top. Pour the egg mixture evenly, and gently mix so everything is combined. Finally, sprinkle the last ½ cup of cheese on top.20 oz frozen hash browns, 2 cups shredded cheddar cheese
- Bake the casserole for 55-65 minutes, or until the eggs in the center are fully cooked and the top is starting to lightly brown.
- Remove from the oven and allow to cool for 10-15 minutes. Topped with fresh chives. Slice and serve warm.fresh chives
Notes
- If the casserole top is browning too much, cover with tin foil around the 25-30 minute mark.
- To make the day ahead- follow directions to step 5. Cover casserole with tin foil and place in fridge overnight. Take out of the fridge at least 30 minutes before baking the next morning.
- Place cooled casserole slices in a freezer-safe container and freeze up to 2 months. To defrost, place in the fridge overnight or let it sit at room temperature.
- Reheat single slices in the microwave, toaster oven, or oven until warmed through. If you want to reheat a large portion, place it back in the oven until warmed through.
- If making half this recipe, use a 8x8 square pan and bake for about 35-45 minutes.
