When it comes to easy breakfast ideas that can feed a crowd, nothing truly beats a warm and cheesy Bacon Egg and Cheese Biscuit Casserole. It’s comforting, hearty, filling, and packed with all the traditional breakfast flavors. You’ve got crispy bacon, eggs, cheese, and flaky biscuits- making it perfect for both casual mornings at home or special gatherings. Wether you’re in the middle of planning a weekend brunch with the girls, hosting your parents for the holidays, or just in need of a damn good breakfast, this biscuit breakfast casserole is the kind of recipe you’ll refer back to time and time again.

I recently whipped up this casserole and brought it with me to a bachelorette party over the weekend, and everyone LOVED it (including the bride). Safe to say you will love it too! It was super easy to prep, bake, and then reheat later on for everyone to enjoy.

The flakey, buttery biscuits combined with the crispy bacon, tender onions, fluffy eggs, and cheese make the most perfect flavor combination. It’s a total crowd pleaser and perfect to bring to a brunch or if you are hosting family! If I want to bring something a little less bread-heavy, I like to make my cottage cheese egg bake instead.

Just like my croissant breakfast casserole, this recipe is easy to prep and can be made morning of or the night before! It’s also made with store-bought biscuits which I love grabbing to make my life easier. Don’t get me wrong, I do love a homemade biscuit- but sometimes you just need something quick and these biscuits are just that! Plus my ultimate hack of making your bacon in the oven leaves you with an easier clean up, which we love.

Savory casseroles aren’t your thing? No worries, a sweet breakfast casserole is my jam as well! This french toast casserole is my ride or die- every time I make it everyone ravessss about it. I also have pumpkin french toast casserole and an apple french toast casserole versions. All of them are easy to prep and can be made the night before!

  • bacon- I used regular sliced bacon for this recipe, but thick sliced or a flavored like maple bacon would be delicious as well.
  • onion
  • eggs
  • biscuits- I used a regular can of grands biscuits, which is about 8 biscuits.
  • milk- any milk works in this casserole- I like adding Fairlife for extra protein.
  • salt & pepper
  • cheese- I prefer to use a block of cheese and hand shredding it myself. It melts way better than pre-packaged shredded cheese.

Cooking bacon in the oven is so much better

My favorite life hack at the moment is making a large batch of bacon in the oven. I just cover a baking sheet in tin foil or a piece of parchment paper, and lay the bacon pieces out. I never bother using a wire rack.

Pop the bacon in a 400° F oven and let it cook until crispy- about 10-20 minutes depending on thickness of bacon.

I definitely recommend giving this a try if you haven’t before. There is just something about not having to wipe the grease spots off the top of the stovetop that sets my soul on fire!

How to make this casserole

pour eggs on top, and top with extra cheese.

  • Start by cooking the bacon and onions.
  • Mix up the eggs, milk, salt, & pepper.
  • Layer the casserole in the pan- biscuits, cheese, bacon, onions, then pour the egg mixture over top! Finish with more cheese because duhhh. Always more cheese!
  • Bake until fully cooked through & serve warm!

Make this the night before

If you’re anything like me and like to prep ahead, this is the perfect recipe to make the night before and pop in the oven when you get up! I love doing this when I have family staying over or even for the holidays. Nothing beats a breakfast casserole to start the morning (looking at you Christmas morning).

Prep this entire recipe through Step 5, making sure to allow the onions and bacon to cool completely before adding to the casserole dish. Pour egg mixture over top and place tinfoil over the casserole. Put it in the fridge over night.

Take out of the fridge about 30 minutes before baking the next morning while you preheat your oven. You might need to add a few extra minutes to the baking time, so be sure to keep an eye on it!

Storage and Reheating

This casserole will stay fresh covered in the fridge for 4-5 days, or up to 2 months in the freezer.

To reheat- heat individual squares in microwave or toaster oven until warm. You can also place the entire casserole back into oven until warmed through.

When freezing, wrap the casserole tightly in freezer safe container or plastic wrap & tinfoil. To defrost, let it sit at room temperature until defrosted or in the fridge overnight.

Crowd-Pleasing Bacon Egg and Cheese Biscuit Casserole

Ingredients
 

  • 12 slices (12 slices) bacon, cooked and chopped
  • 1 (1) small yellow onion, diced
  • 1 (16 oz) can of grands biscuits, (8 biscuits), quartered
  • 12 (12) large eggs
  • ¾ cup (177.44 ml) milk
  • ¾ teaspoon (0.75 teaspoon) salt
  • ½ teaspoon (0.5 teaspoon) black pepper
  • 1 cup (113 g) shredded cheddar cheese

Instructions
 

  • Lay bacon on a lined baking sheet and bake in a 400℉ oven for 10-20 minutes, until crispy. (or cook in a large skillet- fry bacon over medium heat until crispy, about 8-10 minutes) Remove from pan and place on a paper towel-lined plate to drain and cool.

  • Cook onions in a pan over medium heat until translucent, about 7-10 minutes. Remove from heat to cool.
    1 small yellow onion
  • Preheat oven to 350° F. Grease a 13×9 dish and set aside.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Set aside.
    12 large eggs, ¾ cup milk, ¾ teaspoon salt, ½ teaspoon black pepper
  • Spread the quartered biscuits across the bottom of the greased pan. Sprinkle ½ cup of cheese over top of biscuits, and then sprinkle on bacon bits and onions. Pour egg mixture on top. Gently mix this up so that the biscuits are completely covered with the egg mixture. Finally, sprinkle the last ½ cup of cheese on top.
    1 can of grands biscuits, 1 cup shredded cheddar cheese
  • Bake the casserole for 27-35 minutes, or until the eggs in the center are fully cooked and biscuits are cooked through. Place foil on top of the casserole around the 20/25-minute mark if browning on top.
  • Remove from the oven and allow to cool for 5-10 minutes before slicing. Serve warm.
