I love a sweet breakfast every now and then (looking at you belgian waffles), but sometimes I want something that feels a little lighter without sacrificing flavor. This Protein French Toast is the perfect compromise!

It’s made with high-protein bread, protein powder, and egg whites for a breakfast that’s just as delicious and satisfying as the real thing- no skimping on taste over here in B&B kitchen! This recipe is super easy to make and perfect for any morning of the week.

Here are some notes on a few ingredients- please see the full ingredient list in the recipe card below!

  • high protein bread- I used Dave’s Killer Bread 21 Whole Grains and Seeds.
  • protein powder- My absolute favorite whey protein powder is from Driven Nutrition. I used vanilla for this recipe, but you could also use chocolate or another flavor you love! If you don’t like or use protein powder, feel free to skip it.
  • egg/egg whites- Regular french toast recipes use whole eggs, but we are using one whole egg and the rest egg whites!
  • cinnamon- This is a staple in french toast. You could also add a small dash of nutmeg, ginger, or pumpkin pie spice as well!
  • milk- I used almond milk but you can use any milk you enjoy.

Step-by-Step Instructions

How to make protein french toast. 1. Wet ingredients in glass mixing bowl with whisk. 2. Piece of bread dipped, both sides in the wet ingredients. 3. Dipped piece of bread on cooking pan. 4. Protein french toast warm and ready to eat with powdered sugar on top!

Step 1: Mix all ingredients except for bread together in a bowl. Heat a skillet over medium heat.

Step 2: Dip bread in egg mixture on both sides, making sure it soaks in the liquid.

Step 3: Spray the skillet with nonstick spray or butter. Add bread to skillet and cook for 3-4 minutes on each side, or until golden brown.

Step 4: Remove from skillet and top with powdered sugar and syrup before enjoying!

Tips and Tricks

  • Whisk the egg mixture well to get rid of any protein powder/cinnamon clumps.
  • Use sturdy bread so that when you dip it in the egg mixture it doesn’t fall apart
  • Find a protein powder that is high quality and actually tastes good. There are so many protein powders out there that are terrible and will then make your protein french toast taste terrible. This protein powder is my favorite.

Storing & Freezing

This french toast can be stored in an airtight container in the fridge for 3-4 days. To reheat, place back on a preheated skillet or microwave until warm.

Protein french toast can also be frozen after it has cooled completely and stored in a freezer-safe container. Defrost completely in the fridge before reheating.

Ingredients
 

  • 6 slices (6 slices) high protein bread, I like Dave's Killer Bread!
  • 1 (1) large egg
  • 3 (3) large egg whites
  • ½ cup (122 g) milk
  • 2 tsp (2 tsp) cinnamon
  • 1 scoop (1 scoop) vanilla protein powder, I use Driven Nutrition
  • ½ tsp (0.5 tsp) vanilla extract

Instructions
 

  • Whisk all ingredients except for bread together in a bowl. Heat a skillet over medium heat.
