These simple Puff Pastry Breakfast Tarts are my new go-to breakfast recipe. They are the perfect combination of buttery, flakey pastry & classic savory breakfast flavors. Made with 5 simple ingredients like bacon, eggs, and cheese, these tarts bake up golden in under an hour. They're simple, customizable, and sure to become a go-to breakfast favorite.

As a lover of breakfast and all things bacon (if you haven't caught on yet), these bacon-and-cheese-filled puff pastry breakfast tarts are my new obsession. I made them the other day and could NOT stop sneaking bites in as I was taking these photos! There is just something so satisfying about the combo of an egg with bacon & cheese, on top of golden, flaky puff pastry.
I love these breakfast tarts not only because they are easy & quick to make, but also because they are great for hosting. Being single serve, they are perfect to make so everyone can grab one. Plus they look super fancy, like you did all this crazy work to make them, but your guests will never know how simple they were.
Some of my favorite puff pastry recipes are these puff pastry bacon & cheese turnovers, or for something on the sweeter side- these homemade toaster strudels! The toaster strudels are a 10/10!
ingredients you need

- puff pastry- I used 1 sheet for these tarts, a normal box comes with 2. Double the recipe to make 12 tarts, save the second sheet for a rainy day, or make some of these puff pastry breakfast cups!
- bacon- any cut of bacon is great for this recipe.
- cheese- I used sharp cheddar cheese, freshly grated of course! I prefer to grate it myself because it melts better than pre packaged cheese.
- eggs- medium sized eggs are better for the size of these tarts, but if you only have large eggs that works as well!
- salt & pepper
- chives- optional but I love to add them for a little freshness and pop of color! Green onions are also a great option.
Thawing puff pastry sheets
Puff pastry is sold in the freezer section of most grocery stores. To defrost, you have a few options. If you're a person who plans ahead (ahem, not typically me), stick the dough in the fridge overnight. This is the best way to defrost, since it allows the dough a longer time to defrost & can give you more rise when baking.
If you have less time, let it sit at room temperature for 20-30 minutes, depending on how warm your room is. It should be able to be unfolded but not warm to the touch!
How to make

fold the edges, crimp with a fork, and then poke the middle of the dough.

sprinkle the edges with the bacon bits and cheese, making a well in the middle.

crack an egg in the middle of the puff pastry & bake the tarts.
These tarts are simple to make & come together in under an hour. I love using frozen puff pastry because it's easy to find and always bakes up perfectly!
- start by unfolding the thawed puff pastry, rolling it out a little, then cutting it into 6 equal rectangles. Fold the edges of the sides over and score with a fork, this doesn't have to be perfect! Poke the middle of the puff pastries with the fork to prevent bubbles in the middle while they are baking.
- sprinkle the bacon and cheese around the edges of each tart, leaving a well in the middle of each one to place the egg in.
- carefully crack an egg in the middle of each tart. If you're using large eggs instead of medium, they might run out a bit, but thats ok!
- place the tarts in the oven for 15-20 minutes, or until the puff pastry is golden brown and the egg whites are fully cooked. I left mine in for 20 minutes and it gave me a hard yolk, so if you like runny yolks I would take them out sooner!
other ways to make breakfast tarts
While I love the classic bacon egg and cheese- you can absolutely change these breakfast tarts to your liking! Other things that would be delicious in this recipe-
- swap the bacon for turkey bacon, breakfast sausage, diced ham, or chorizo
- instead of cheddar cheese, use another favorite cheese you enjoy- pepper jack, mozzarella, goat cheese, swiss. Next time I think I'll spread some boursin on the bottom of each tart!
- add sautéed veggies on top- onions, bell peppers, broccoli, or asparagus would be delicious.
- add some everything bagel seasoning to your tarts for extra flavor.
- hot sauce drizzled on top to add a kick (would be great with the pepper jack cheese).

Storage and Reheating
Though these breakfast tarts are best eaten fresh out of the oven, they can be stored in an airtight container in the fridge for 3-4 days.
To reheat, place them in a toaster oven or oven at 350℉ until warmed throughout. You can also use a microwave, but the puff pastry won't get as crispy. Note that the egg yolk will continue cooking when warmed up.

Savory Puff Pastry Breakfast Tarts
Ingredients
- 1 sheet of puff pastry thawed
- 1 cup shredded cheddar cheese
- 6 pieces of bacon cooked & crumbled
- 6 medium eggs
- salt & pepper to taste
- chives chopped (for topping)
Instructions
- Preheat oven to 400℉. Line a baking sheet with parchment paper.
- Unroll thawed puff pastry, and roll it out a bit thinner with a rolling pin. Slice it into 6 equal rectangles. Transfer the pieces to the baking sheet.1 sheet of puff pastry
- Fold the edges inward, only about ¼ inch, and press the edges with the back of a fork to seal them. Prick the inside surface of the rectangle all over with the fork to prevent bubbling.
- Sprinkle the cheese and crumbled bacon on the outside edges, making a well in the middle of each puff pastry for the eggs.1 cup shredded cheddar cheese, 6 pieces of bacon
- Carefully crack an egg in each well, and then top with salt and pepper to taste.6 medium eggs, salt & pepper
- Bake the tarts for about 15 to 20 minutes, or until puff pastry is golden brown and the egg whites have set. 20 minutes gave me fully cooked egg yolks.
- Top with chopped chives and serve warm.chives
Notes
- Store in an airtight container in the fridge for 3-4 days.
