Light & Fluffy Crustless Broccoli Cheddar Quiche

This crustless broccoli cheddar quiche is everything you love about a classic quiche, minus the pie crust! Made with a creamy egg custard, tender broccoli, sharp cheddar cheese, and savory shallots, this easy breakfast recipe is light, flavorful, and perfect for meal prep, brunch, or a make-ahead breakfast. Whether you’re skipping the crust to save time or simply love the cheesy egg filling like I do, this foolproof quiche is an easy recipe you’ll make again and again.

As a certified quiche lover, I’ve had my fair share of quiches. While I am partial to a pie crust, sometimes you just don’t have it in you to whip up a pie crust or run to the store to buy a premade one. The great thing about quiche is that they can be made without a crust and taste just as good!
This broccoli cheddar crustless quiche is everything you love about a traditional quiche- fluffy custard filling that’s full of flavors- just without the pie crust. A bit different than a classic frittata which has a less custard-y filling, this quiche is still light and fluffy & melts in your mouth with every bite.
If you are reading this and thinking no way, I want a pie crust- don’t worry! I have plenty of other quiche recipes, plus below I’ll let you in on a little secret (just kidding it’s not a secret, you can make this with a crust).

No Pie Crust Needed
A quiche with no pie crust?! Say less! Although to be fair, the crust is often my favorite part of the quiche, sometimes you don’t want the hassle of having to make a crust, or you just want the egg filling alone- I get it!
Ingredients for this crustless quiche are simple- all you need is eggs, cream & milk (for the custard filling), salt and pepper, and then we add some flavor with shallot, broccoli, and cheddar cheese. I love to top mine with some fresh chives!
- Don’t have a shallot? I’d add a 1/4 cup of yellow or green onion instead.
- Don’t have cheddar cheese? No worries, really any melty cheese would be delicious with this quiche.
- Not a broccoli fan? Well I have plenty more quiche recipes for you to try that don’t have broccoli in them! You can make any quiche with or without a crust.




Making a Crustless Quiche
Making a crustless quiche is 100 times easier than making one with a crust, simply because pie crust can be time consuming to make, and also intimidating. Not having to make the crust for this dish frees up so much prep and bake time, which I personally love!
- Start by prepping your pie dish with non-stick spray.
- Saute the shallot for a few minutes, then add in the broccoli. You don’t have to cook the broccoli all the way through since it’ll bake longer in the oven.
- Whisk the egg custard mixture together until combined.
- Assemble your quiche- add the veggies and half of the cheese to the dish, top with the egg mixture, mix it up a little. Finish it off by adding the last half of the cheese.
- Bake until the quiche is fully cooked through in the middle and gold brown on top!

You’re on Team Pie Crust
Sometimes you need a break from the thing you love (pie crust), just so the heart grows fonder as you’re apart from one another. And sometimes, you just know what you want. You can add a crust to this broccoli quiche any time you’d like. I have a super simple all-butter pie crust recipe that would be the perfect addition to this recipe. Light & Fluffy Crustless Broccoli Cheddar Quiche
Ingredients
- 1 tbsp (14 g) butter , or olive oil
- 1 (1) shallot, thinly sliced
- 2 cups (182 g) broccoli florets, diced
- 3 tbsp (3 tbsp) water
- 6 (6) large eggs
- ½ cup (120 ml) whole milk
- ½ cup (118.29 ml) heavy cream
- ½ teaspoon (0.5 teaspoon) salt
- ¼ teaspoon (0.25 teaspoon) pepper
- 1 cup (113 g) shredded cheddar cheese, divided
- 1 tbsp (1 tbsp) fresh chives, chopped
Instructions
- Preheat the oven to 350 F. Spray or butter a 9-inch round pie plate and set aside.
- Melt the butter in a saute pan over medium heat. Add the shallot and saute for 2-3 minutes, until tender. Add the broccoli florets and 3 tbsp of water to the pan. Cook for another 3-4 minutes or until the water has evaporated.1 tbsp butter , 1 shallot, 2 cups broccoli florets, 3 tbsp water
- Remove the broccoli from the heat and pour into the greased pie dish, spreading evenly across the bottom. Set aside while making the custard filling.1 cup shredded cheddar cheese
- In a large bowl, whisk together the eggs, milk, cream, salt, and pepper until combined.6 large eggs, ½ cup whole milk, ½ cup heavy cream, ½ teaspoon salt, ¼ teaspoon pepper
- Layer ½ cup of cheese on top of the broccoli in the pie dish. Pour the egg mixture over top the broccoli/cheese layer, and gently mix. Top with the last ½ cup of cheddar cheese.1 cup shredded cheddar cheese
- Transfer pie dish to the oven and baked for 35-45 minutes, or until the center is set and the eggs are cooked through. Allow to cool for 10 minutes. Sprinkle the top with the fresh chives, slice, and enjoy!1 tbsp fresh chives
Notes
- Store quiche after it has completely cooled by either covering the pie dish with tin foil, or putting slices into an airtight container. Quiche will last in the fridge for up to 4 days.
- To reheat, place a slice of quiche in a preheated oven, toaster oven, or in the microwave and heat until warmed throughout.
- To freeze, allow the quiche to cool completely, and then place slices in a freezer-safe container. Quiche will stay good in the freezer for 2-3 months. To defrost, allow the quiche to sit in the fridge overnight.
