If you are reading this post, just know a lot of time has been put into this small space on the internet. This blog has been my little project since mid-March, ever since all this stay-at-home-with-no-work-to-do started.
With a ton of free time on my hands, I found myself more and more in my tiny apartment kitchen. If you know me at all, you know I love to bake, so when I got the idea to start a food blog I figured now would be a great time to dive into a little side hobby.
I am by no means a writer, a photographer, or even close to a chef. But my best days are spent in the kitchen. I find cooking and baking to be almost therapeutic. Something about the process of making a beautiful 3-layer cake, a batch of my mom's famous cookies, or a pan of gooey peanut butter brownies makes me happy. Being able to bring family and friends together through food and spread happiness with baking is something I also love. There is nothing that gets me quite like an "omg this is DELICIOUS" comment from someone who tries my baked goods 🙂
I've spent the last few months learning all about food photography, blogging, creating a website (which I found very challenging), SEO, social media, recipe testing (and failing), and a lot more. It's been a lot of fun behind the scenes, and I am ready to share it with the world!
S'mores Cookie Cups
Ok, less about the blog and s'more about these cookies 😉
I want to prematurely apologize because I am about to ruin your #summerbodgoals with this recipe. Trust me, they're that good.
My family has been making a version of this recipe for years (in a bar form) and I thought it would be fun to change it up and make them into little "cookie cups" (not a cookie, but not a cupcake?!)
These cookies are the ultimate summer cookie, obviously because summer=bonfires=s'mores. If you're anything like me, you get a little offended when someone has a fire but doesn't provide the makings of a s'more.
These cookies have a graham cracker cookie dough, with bars of chocolate and marshmallow fluff smushed between more graham cookie dough. It's legit a s'more in cookie form.
PS: The only thing made from scratch here is the graham cracker cookie dough! For scooping the cookie dough, I used the medium cookie scoop from my favorites list.
From experience I can tell you, these cookies are not only easy to make but even easier to inhale. Who can resist loads of chocolate and marshmallow surrounded by pillows of buttery graham cracker cookie? Not me!

S'mores Cookie Cups
Ingredients
- 2 cups all-purpose flour
- 2 cups graham cracker crumbs
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 sticks unsalted butter, softened
- 1½ cups light brown sugar, packed
- 2 teaspoon vanilla extract
- 2 large eggs
- ¾-1 cup marshmallow fluff
- 4 hershey chocoalte bars
Instructions
- Pre-heat oven to 350 degrees. Spray muffin tin with non-stick cooking spray and set aside.
- In a medium bowl combine flour, graham cracker crumbs, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and brown sugar together until smooth. Add in the vanilla and eggs.
- Add dry ingredients to butter/sugar mixture and mix until just combined (don't overmix). Take about ¾ of the dough for the base of the cookies (saving ¼ for the topping). This doens't have to be extact!
- In the greased muffin tin, scoop about 1.5 tablespoon dough into the muffin cup and press down. Place 2 pieces of the chocolate bar on top of the dough. Then dollop about ½ tablespoon marshmallow fluff on top of the chocolate.
- Crumble the remaining dough that was saved over top the marshmallow- see picture (some of the marshmallow will still be visible- that's ok! You don't need to cover completely).
- Bake 12-15 minutes or until golden brown. Allow cookies to cool completely and enjoy!
Notes
- 2 cups of graham cracker crumbs were about 2 packets of whole graham crackers for me.
- I ground up my graham crackers in a blender, but you can use a food processor or put them in a plastic bag and crush them that way.

Hi, these look delish but I'm wondering if you are using a mini muffin tin or regular size? I'd like to make bite size, what would the cooking instructions be?

Hi Nicki, I used a regular muffin tin. For a mini pan I would try baking fo 7-8 minutes to start and then adding more time on as needed!

Hi. If I were to make this for a party, would you recommend I make the dough/assemble them ahead of them and keep in fridge and just pop in the oven for the baking time right before I serve them? Or Do you recommend I make them entirely including the baking ahead of time?

Hi Elizabeth! You can do either, whichever is easier for you. They will stay fresh in an airtight container at room temperature for a day or two, so you could always make them the night before or the morning of! If you want to serve more "warm & fresh out of the oven", then you could assemble and bake right before. I would take them out of the fridge a little beforehand to let them come to room temp before baking, or bake for a few minutes longer.
