Blueberry compote is one of the easiest ways to make any breakfast feel extra special. Made with just 4 simple ingredients, this homemade blueberry sauce is sweet, bursting with juicy blueberries, and comes together in under 30 minutes. Whether you spoon it over pancakes, waffles, oatmeal, yogurt, or a slice of warm sourdough toast, this easy blueberry compote adds fresh fruit flavor to just about everything. It's the perfect recipe for using up fresh summer berries, but frozen blueberries work just as well, making it a delicious topping you can enjoy all year long.
Add blueberries, maple syrup, vanilla, and lemon juice to a medium sized saucepan.
1 lb fresh blueberries, ⅓ cup maple syrup, ½ tsp vanilla extract, 1 tbsp fresh lemon juice
Bring to a simmer over medium heat and stir occasionally, for about 12-15 minutes. As the blueberries start soften use a wooden spoon to gently mash them up.
Remove from the heat and allow to cool a bit, the mixture will thicken a little as it cools.
Serve on your favorite pancakes, waffles, baked oats, and more!
Notes
If using frozen blueberries, add them in frozen (do not defrost). Mixture might need extra time to cook.
Store in the fridge in an airtight container for up to 2 weeks.
Can be frozen for up to 3 months. Defrost the compote in the fridge overnight.
