Ingredients

  • ½ cup old fashioned oats
  • ½ tbsp chia seeds
  • ½ cup milk
  • ¼ cup greek yogurt
  • 2 tsp maple syrup
  • 2 tbsp plain cream cheese softened to room temperature
  • ¼ tsp lemon zest
  • ¼ cup blueberries fresh or frozen
  • crushed graham crackers for topping

Instructions

  • In a jar or mixing bowl, mix together the oats and chia seeds.

  • Stir in your milk of choice, greek yogurt, and maple syrup until well combined. Add the softened cream cheese to the mixture. Stir thoroughly to break it up and blend it into the oats.

  • Add the blueberries to a small bowl and mash them with a fork. Fold in the blueberries and lemon zest and make sure all ingredients are combined.

  • Cover the mixture and refrigerate it for at least 5 hours, or overnight for the best texture.
  • In the morning, give the oats a good stir. You can top them with additional fresh berries, a sprinkle of crushed graham crackers, a drizzle of honey, or extra lemon zest if desired.

Notes

  • Overnight oats can be stored in an airtight container for 3-4 days.
  • Add half to a full scoop of protein powder.
  • Make sure everything is fully mixed before allowing to soak in the fridge overnight. 
  • If your oats are too thick, add a splash of milk.
