These Oatmeal Raisin Granola Bars are chewy, soft, and packed with hearty rolled oats, juicy raisins, toasted pecans, and warm cinnamon. They’re made with simple pantry ingredients and come together without actually baking the granola bars! The oats and pecans are toasted in the oven for extra flavor, then everything is mixed with a brown sugar & honey mixture and chilled until firm. If you love oatmeal raisin cookies, these easy homemade granola bars are basically the chewy, snackable version!
Heat the oven to 350℉. Toss oats and pecans together, and spread mixture over baking sheet and toast for 5 minutes, mix, and toast again for another 5 minutes, until lightly toasted. Transfer toasted oat mixture to a large bowl.
3 ½ cups old-fashioned rolled oats, ½ cup pecans
Line an 8x8 square baking dish with parchment paper. Set aside.
Cook honey, sugar, butter in a small saucepan over medium-low heat, stirring frequently, until sugar is fully dissolved (about 3-5 minutes). Remove from heat, stir in salt, vanilla, and cinnamon.
Add honey mixture and raisins to oat mixture and toss until well combined. Transfer mixture to the prepared dish and press firmly into an even layer.

Place in the refrigerator to chill for at least 2 hours. Lift the granola out of the dish using the liner and remove the paper. Slice into 12 individual bars.
Notes
Store granola bars in an airtight container in the refrigerator for up to 1 week.
Freezer: For longer storage, wrap individual bars in parchment or plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 3 months.
To serve: Let frozen bars thaw in the refrigerator or at room temperature for a little while before eating.
