30-Minute Prep Overnight Apple French Toast Casserole

This Overnight Apple French Toast Casserole is a decadent french toast layered with caramelized apples and a crunchy oat streusel! It only takes a quick 30-minutes to prep, and under an hour to bake!

Ingredients

french toast:

  • 1 loaf brioche bread
  • 6 large eggs
  • 1 ¼ cup heavy whipping cream
  • ½ cup whole milk
  • ¼ cup maple syrup
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • pinch of salt

apple topping:

  • ¼ cup butter
  • 3 large Granny Smith apples peeled and thinly sliced
  • 2 tbsp light brown sugar packed
  • 2 tbsp maple syrup
  • 1 tsp cinnamon

streusel topping:

  • ¼ cup butter cold and cubed
  • ¼ cup light brown sugar packed
  • ½ cup all-purpose flour spooned and leveled
  • ½ cup old-fashioned oats
  • 1 tsp cinnamon
  • ¼ tsp salt

Instructions

  • Cut your brioche bread into 1-inch cubes and spread into a greased 9x13 baking dish.

  • In a large bowl, whisk together the eggs, heavy whipping cream, milk, maple syrup, vanilla, cinnamon, and salt until fully combined. Pour this over top of the bread evenly and gently toss. Set aside.

  • In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown sugar, maple syrup, and cinnamon.

  • Cook, stirring frequently, until the apples are softened and the syrup is thickened, about 10 minutes. Spoon the apples evenly over the bread. Cover with foil and place in the fridge overnight.
  • Make the streusel topping by cutting the cold butter into the brown sugar, flour, cinnamon, and salt with a pastry cutter or fork, until you get pea-sized pieces of butter. Cover & place in the fridge overnight.

  • In the morning, preheat your oven to 350° F. Crumble the streusel evenly over the top of the casserole and place in the oven for about 45-55 minutes, or until the casserole is baked through in the middle and golden on top. Serve with maple syrup & whipped cream.

Notes

If you don't have time to make this before-hand, it can be assembled and baked right away, just know the texture will be a little different since the bread doesn't have time to soak up the custard.
