lemon bars recipe

ingredients needed to make these lemon bars:

for the crust: – ½ cup unsalted butter, melted – ¼ cup granulated sugar – 1 tsp vanilla extract – ¼ tsp salt – 1 cup all-purpose flour 

for the lemon curd: – 1 cup + 2 tbsp granulated sugar – 3 tbsp all-purpose flour – 3 large eggs – 1 tbsp + 1 tsp lemon zest – ½ cup fresh lemon juice  – powdered sugar for dusting

start by making the shortbread crust. Mix the melted butter & sugar.

then add the vanilla, salt, and flour.

press the crust evenly into the bottom of an 8x8 pan

bake for 20 minutes

make the lemon curd while the crust bakes

mix everything together until well combined.

gently poke holes on top of the crust (not all the way through)

press the dough back to the edges of the pan to make sure there are no gaps

pour the curd on top of the crust and bake again for 20-22 minutes

allow the lemon bars to cool completely and then chill in the fridge for a few hours

once chilled, cut into squares and dust the tops with powdered sugar
