Ingredients

  • cup mashed banana
  • ¾ cup peanut butter
  • ¼ cup maple syrup
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour spooned and leveled
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup dark chocolate chips

Instructions

  • Preheat the oven to 350℉ and line an 8x8 square baking pan with parchment paper, leaving an overhang for easy removal. Set aside.
  • In a large bowl, mix together the mashed banana, peanut butter, syrup, egg, and vanilla until combined.
  • Add in the oats, flour, cinnamon, baking powder, and salt. Mix using a rubber spatula until just combined. Fold in the chocolate chips.
  • Pour the batter into the prepared pan and bake for 27-30 minutes, or until a toothpick inserted into the middle of the bars comes out clean.
  • Allow them to cool completely in the pan on a wire cooling rack before slicing them into bars.

Notes

  • If you don't want to mash your bananas with a fork, use an electric mixer!
  • Always line your baking sheet with parchment paper, it makes removing the bars from the pan a million times easier.
  • Wait to cut your bars until they cool completely, they cut better when they have cooled off.
  • Cut your bars into squares to get more servings.
