- 1¼ cup mashed banana
- ¾ cup peanut butter
- ¼ cup maple syrup
- 1 large egg at room temperature
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour spooned and leveled
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup dark chocolate chips
Preheat the oven to 350℉ and line an 8x8 square baking pan with parchment paper, leaving an overhang for easy removal. Set aside.
In a large bowl, mix together the mashed banana, peanut butter, syrup, egg, and vanilla until combined.
Add in the oats, flour, cinnamon, baking powder, and salt. Mix using a rubber spatula until just combined. Fold in the chocolate chips.
Pour the batter into the prepared pan and bake for 27-30 minutes, or until a toothpick inserted into the middle of the bars comes out clean.
Allow them to cool completely in the pan on a wire cooling rack before slicing them into bars.
- If you don't want to mash your bananas with a fork, use an electric mixer!
- Always line your baking sheet with parchment paper, it makes removing the bars from the pan a million times easier.
- Wait to cut your bars until they cool completely, they cut better when they have cooled off.
- Cut your bars into squares to get more servings.
